When I asked Saibin Honten what they wanted me to drink the most ❓, they recommended this Yamashiroya ✨.

To be honest, I had no idea what I was getting into, so I just went with the recommendation😌.

The Yamashiroya website says it has grapefruit and lemon, but even though it's a Junmai Daiginjo, it has almost no aroma (or is it better described as a dead aroma?).
It's a mellow sake, with almost no acidity, but you can feel the unique umami or amino acids of the nascent yeast 😌 You can also feel the alcohol angle unexpectedly, and you will get used to it as you continue drinking, but it's for sipping ✨.
If you try to warm it up, the mildness and rice flavor will stand out, and this is definitely my favorite 😆✨.
As the label says it's an unfinished sake that completes itself with food, we don't recommend drinking it as is, especially cold, but it's best with strong food and warmed up✨.
The concept is up-and-coming, like Shinsei Shuzo or Tsuchida Shuzo, but the taste is classic and refined, which I personally prefer ✨(I hope more and more people start to get into gutsy Ikaruga from this kind of sake little by little🤔)
