A 3-year aged Jun Daigin brewed with Gohyakumangoku from the Mita district, which is also the origin of the Houou Mita name.
Just hearing the name makes you drool 🤤.
Quite a fruity melon🍈 type top nose.
The attack is gentle and thin, but the umami with a rounded richness overflows from it, and after swallowing, a spicy bitterness spreads gradually.
The lingering aroma has a slight alcohol taste with a hint of maturity, which is quite to my liking.
I like it best when it is aged for about 3 years in chilled or ice temperature as a spec! 💯💯💯
