We had junmai and shiboritate honmai (at separate restaurants). Junmai is refreshing and delicious. Goes well with sashimi. It comes at it from a different angle than Niigata's neat, dry sake. No wonder it is so popular. The Shiboritate Honkai is much more powerful than the Junmai. I'd like to take my time with this one. It might be good warmed up. The food was from Yatsuhashi-san's place in Toyama City. The fish, or rather the seafood, was exceptional. They decorated our last night in Toyama.

At a hotel on a trip to Toyama. The flavor comes in easily. The price is 800 yen, but it is worth it. But ... The level of packaged sushi at the supermarket is too high. I envy the people of Toyama Prefecture.

Recommended by Kadoya Sake Shop. Delicious. The modest shwashuwa and sweetness of the rice is combined with the sharpness of the sake, probably due to the effect of the sake's aluzome (alcohol-added) additives. The level of Wakanami and this one is too high. Honjozo is also very reasonably priced, and I'm gradually becoming more and more fond of it.

Shimizuya's year-end sake recommendations It's been about 10 years since I've tasted Masumi. The flavor of cedar casks gives a moistness to this junmai ginjo that is not too flashy. It is a dangerous sake that can be drunk indefinitely. It is certainly a bottle that should be drunk during the year-end and New Year's holidays.

They call it MV type. Probably in Yamaguchi Prefecture? It is a sake made exclusively for MaxValu in Yamaguchi Prefecture. It is made of kimoto, 90% polished rice, pure rice, and at this price. I was very impressed to find such an authentic sake sold at a supermarket. If this kind of project becomes popular in supermarkets across the country, I think more and more sake fans will come to enjoy this kind of sake. The taste is reminiscent of honey lemon. The taste is reminiscent of honey lemon, but the density is not too strong, and I thought it would be easily accepted by people who do not usually drink Kimotos sake. It has the perfect balance of all the flavors: the schwarziness, the sweetness and spiciness, the richness and cleanness. A bottle costs in the mid 4,000 yen, but this is a must buy!

Fuku Chitose, which brings good fortune. Purchased at Marugoto Nippon in Asakusa. This place has a good selection of sake, especially one-cup sake, which comes in handy on business trips. It's a solid Yamahai. I decided that it should be heated, so I boiled it in hot water. The sweetness of the sake came in easily and made me feel relieved.

Asakusa, purchased during a business trip. Took about 5 minutes to open the bottle. It has a firm sweetness, but with a strong schwash, and is nicely balanced. It is a bit like a slightly sweeter version of the active cloudy version of the Liqueur Spring. The overall flavor is rich, but the low alcohol content is also appreciated. The inside of the bowl in which it is poured is truly a light snowfall.

It is delicious! It is similar to the freshly pressed raw sake of Shiborizuru. It has a moderate sweetness and a richness that comes in easily. Since it has a high alcohol content, it can be slightly carbonated. I have been seeing this sake in supermarkets for a long time, but I wonder why I did not notice its quality earlier. Good sake, it's dark under the lamp. You have to know your surroundings better.

Memories of summer. I never thought I could buy Marufei on Hachijojima. Thanks to the sake store. The sweet and sour taste is as pleasant as ever. Maybe it is because some time has passed, but it has a slight sense of maturity. It goes well with the flavor of Yamahai. It is a great way to relax from the fatigue of playing in the sea. I paired it with island sushi. It is delicious. The island sushi is addictive and delicious. I ate it almost every day during my stay. I wonder when I will be able to eat it again.

I see. As recommended by the brewer, lukewarm warming brings out the flavor of this sake. Dry, with high acidity and a hint of sweetness, this is a fine sake that you will never get tired of drinking. I don't understand how they can claim to have won a gold medal for sake that tastes good in a wine glass, but on the other hand, they recommend lukewarm heating. Like Kikutaka, it is no longer sold. Mie Nishiki Light Nigori, which has been sold out like Kikutaka. We procured this sake, which had been stored in ice temperature for eight years, from a well-known liquor store. Wow, this is impressive 😀. The shwashiness is still there even after 8 years. The sweetness and acidity overflows, and the bitterness characteristic of Mie Nishiki's light cloudy taste creates a lingering aftertaste. Mie Nishiki makes you feel the bitterness is delicious. Oh, this, this, I used to love Mie Nishiki. The flow of time gives the taste a mellowness, and it has both freshness and maturity, two contradictory elements. It is delicious, deeply delicious. It was the night I vowed to drink this one again, little by little, over the course of a year.

Well, it looks like a green apple. I don't know how it differs from regular apples, though. The alcohol content is 12%, so it goes down a treat. I mistook it for Dokidoki Yamamoto at the blind tasting.
