Sometimes a cup of sake, a Niigata souvenir 🍶Classic taste, but with a surprisingly refreshing aftertaste 😋Thanks for the delicious taste!

Middle. The aroma is more subdued than the hiyaoroshi on the left. But because it has not been laid down to rest, I think this one is easier to drink. It seems to go with everything! It is quite refreshing, or rather, clean, so I think you can easily put it down without any accompaniments. The aftertaste is really good too. I like this flavor! It's fun to compare drinks, I'm so glad!

First time drinking outside in a while, and the second drink was ayu - ‼️ This was also the first time I had this. The aroma is gorgeous and the sweetness and acidity are well balanced. I thought that ayu (sweetfish) was the ultimate in dryness, but it was easy to drink and I liked it.

I thought I had had a rice from Kagawa prefecture called ◯Ide Rice, so I asked for it (or maybe it was just my imagination). I drank it after Mutsu Hachisen, so it lacked fruity flavor, but it tasted delicious when heated.

Ayaka-gun, Kagawa Prefecture. Yushin Brewery Co. Yushin Namaishu Junmai Ginjo No. 9 Yeast We are back to drinking at home. Purchased on a trip during Obon. I jumped on a label I'd never seen before and neglected to check the date, and found out that it was February 💦. I drank it cold. Not much Uitatekoso, but there is a slight graininess, with a hint of alkaloa. No mature-like aroma. The mouthfeel flows smoothly on the tongue, and the taste is full and full of rice flavor with a sense of maturity. The aroma that passes through the nose is a little matured, so it has matured a bit. But it just has an autumn-aged look to it 🤣. As the label on the back of the bottle says it is slightly dry, there is a bit of spiciness at the end, but I don't mind it too much because the umami is very strong. The high alcohol content makes it easy to drink, but it comes back with a thud later. I would like to try a freshly brewed sake once. Ingredients: rice, rice malt Ingredient Rice:100% Yamadanishiki (produced in Zaita-machi, Kagawa Prefecture) Yeast used: No.9 yeast Rice polishing ratio:55 Alcohol content: 17.5 Sweetness/spiciness: Slightly dry

Smell thin. In the mouth it has fine bubbles and a fresh mouthfeel. Refreshing. The taste is very good 😋 and the mouthfeel is very smooth and the flavor goes right through. The edamame I happen to be eating is so good 🫘🥜. Easy to drink, will buy again㊗️.

Then we have the Jun Dai on the left side. This one has a nice fluffy ginjo aroma, as is typical of jun-dai. The mouthfeel is light and sweet, and the acidity changes to a nice sourness in the mouth. It's kind of elegant! Thank you for the sake!

Next is Golden Crane When I ask the locals on Sado Island what sake they drink, almost everyone answers, "Kintsuru. Almost all of them answer, "Kintsuru. It is the most major sake on Sado Island. Light and dry! Shakiness that is a model of Niigata sake. What is noteworthy is its transparency! There is no unpleasant feeling of brewing alcohol, so it is so easy to drink that it is almost like water. It is so easy to drink that it almost feels like water. It is a delicious and scary yuzu. Thank you very much!

Acidity
This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

An accompaniment to a spur-of-the-moment trip to Akita 🚄. Mild sweet and sour taste of No.6 yeast 🍹. I can drink it up on the way to and from a 2 day/night trip. It is a versatile drink that can be enjoyed with or without food 🥴.

We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.

The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". It is like licking a muscat candy. The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing. It is a delicious drink, but I think it is suitable for different situations.

Like Minatoya Toisuke, this is another brand of Murasuke that I bought because I liked it after tasting it at Ponshu-kan in Echigo Yuzawa. There are many liquor stores that sell Murasuke in Tokyo, but I had never seen this brand before. As its name suggests, it's low in alcohol content at 13%, so it's easy to drink 😚. When you drink it cold, it's light and refreshing, with no hint of bitterness. It's delicious in its own right, but when it's chilled at a cooler temperature, it becomes sweeter and more impressive. I liked it best when it was chilled in the wine cellar at about 15 degrees Celsius 😄. It's interesting to see how it changes with the temperature, but in any case, it's a different direction from the sweet and sour fruity Murasuke. I think it's a fine sake that won't go with any snacks 😋

Rice used is something from Kasama That's one word for the wonderful ‼️. I feel it's sophisticated and seamless. Full of flavor with a clean aftertaste. The price is high, but the level is also quite high. ‼️

Today, a Junmai Daiginjo Yamazakura Momo (YASURA) from Sudo Honke in Ibaraki Prefecture: ❗️ The aroma is faintly like old sake. The first sip has a dense texture on the tongue. After that, it has a numbness and a deep flavor like old sake. ❗️The sake we drank this time was last year's sake, so it was a nama-zake, but it didn't have much of a nama-zake feel. ❗️❗️

The rice used is Yamadanishiki from the Sato Plantation in Sosa City. It is said to be free of chemical fertilizers and synthetic agricultural chemicals. The sweetness is moderate. The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) If that's the case, I look forward to it every year! This year's was my favorite type❣️.
