(**Ohmigosh*)🍶🍶🍶🍶 Today I got a bottle of Sogen, a local sake 😀 I bought it because it was at a liquor store I hadn't been to in a while✋It doesn't have much aroma, but when you drink it, it has a good balance of sourness and umami, with a concentrated flavor. It is slightly dry and has a nice sharpness so you won't get tired of drinking it 🤔It is a delicious sake, almost like a first squeezed raw sake 😚.

I received a bottle of sake from Sogen Sake Brewery, which was severely damaged by the Noto Peninsula earthquake 😀 I drink this sake often and have memories of going to the brewery last year to buy Kiri sake 😥 I hope they will resume sake production soon. It is a light nigori 26BY of Iwo 🍶. First, cold sake. The top aroma is that of old chests 😂. In the mouth it has a hint of sweetness, but the aroma of old chests is strong😅. Next, warmed sake 🍶. When warmed, it smells like wet wood 😌. In the mouth it tastes a little acidic and the taste wasn't bad. Like the Chiyomusubi I had two drinks ago, nigori-style sake is said to be unsuitable for aging because the nigori part of the sake is altered and causes off-flavors. Shizuoka Sake Tour. Gotemba's Kinmei Ryotama Junmai Ginjo, alc.16%. When served in the refrigerator, it has a subtle cider-like aroma. The aroma does not change much in the mouth, and after the alcohol and weak acidity, the umami of rice comes easily. The aftertaste is stimulated by alcohol, but it is not an unpleasant attack, but rather a strange numbing sensation and heat. There is no significant change even when the temperature is set to room temperature. Should we wait a few days? Two days later, the alcoholic stimulation has disappeared, and the umami of the rice has become noticeably mellower. The aroma is still cider-like, so the overall impression is that it is a cross between sake and mead. This is good.

It has a dry, drinkable, honey-like sweetness, a strong flavor, powerful acidity, and a clean aftertaste with enough stimulation to numb the tongue. Delicious. Impact like a whiskey. The official recommendation is to drink it lukewarm (around 40 degrees Celsius). The warmer it is, the less stimulating it is. It is a great match for fish, and the fish becomes twice as good with the support. I should have bought another kind. Second day. The second day was also good.

#Drinking at home The spiciness, sweet umami, and moderate acidity come quickly, and while enjoying the aftertaste, the bitterness comes unexpectedly. It is similar to the first sake released from the brewery, but I think this one has a clearer outline. I think Doukan is stable in its line of slightly sweet umakuchi at first and finishes with bitterness. Like Okura and Tamagawa, if the direction of the flavor is consistent, we can drink it with peace of mind. Anyway, Shiga sake is generally very tasty.
