180ml Nishinoseki bought at my usual liquor store. My first Oita! I thought it would be sweet, but the aftertaste is a bit spicy. But it's delicious. It tastes like I'm drinking it.

We stock sake from Kyushu, which we don't have much of locally. The first one is Nishinoseki. The aroma and taste are quite hard. The first punch worked on my hungry body. It made me hot from the back of my throat to my stomach.

Bought it for a moment with Rusty Cat Rock. Also got Funaguchi Smoked incense! It has a strong alcohol taste, but it has a sweetness with a tangy flavor and a spiciness that is very strong. Much tastier than I expected.

Niigata Souvenirs Part 2 The last one was a gift from Kimi no Ii, along with the Yukinaka Ume. Seasonal summer sake ☀️ It was hot yesterday, so I chilled it to the perfect temperature before serving. Nagurayama Shuzo's Aizu Shikon is brewed in Aizu Wakamatsu City. Although there is a tangy alcoholic stimulation when the sake is first served cold, it has a good balance of sweet, spicy, and bitter tastes, and as the temperature rises, the sweet and umami tastes come out later on. I was thrilled to discover a cozy sake store in a residential area that looked like a renovated warehouse 🚙 and entered the store to meet my first sake. This is Kunimori Junmai Ginjo Handago. I had it at Maruha Shokudo (restaurant) in Nagoya Station on a business trip. It is good to drink with a meal because you can taste the flavor of rice with a clean aftertaste. The plump shrimp were also delicious. Tonight, we will enjoy it with fried shrimp set menus.

Shinetsu-Hokuriku Product Exhibition at Tobu Department Store Purchased at Yoshinoya's sales booth in Nishinomon This is the first time I heard of this brand. According to the store clerk, it is a local brand. There is not much aroma, and the sweetness and umami are very strong. A little sourness and a little bit of miscellaneous taste. The aftertaste is soft. I did not know this brand, but it is a delicious sake. We enjoyed it with yellowtail tataki we got at the same venue. Junmai Nama-zake with a 50% rice polishing ratio. A good value.

This one was given to me in return for sake I sent to my boss, and it's my first Fukuoka Prefecture sake! I didn't know what to choose when it came to Fukuoka sake, so I'm very grateful to be able to drink it in this form! It is a well-balanced and delicious sake. The most wonderful thing about this sake is that it is fire-aged, so it is hard to lose this flavor. It tastes great even after a few days. Although there is sweetness, it does not bother you too much because the main flavor is umami. What is this feeling of being able to drink without getting tired of it? It is not so much sourness, bitterness, or astringency, and it is strange that it is smooth but somehow deep and earthy. Actually, I forgot to post this post after drinking it, but I had this one for New Year's Day. This kind of aromatic and light sake was definitely a good match for Japanese dishes like Osechi. My first Fukuoka sake was a simple and good sake.

@Osawa of Sake Rice used is unknown Not fruity at all. It is not light and dry, and has aged well. The taste is a mellow type with a strong umami. The aftertaste is surprisingly refreshing for a Daiginjo. It is what is called "the sake of sake.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).
