It is that time of year again! This year's Mr. Summer Time was a grand presentation event, inviting circus members to the Kanmei Sake Brewery for a mini-concert of sorts. I couldn't go, though. The aroma of this year's product is a little subdued. I like that mewashi aroma, though. The mouthfeel is strong and dark, and the harmony of umami and sweetness is wonderful! It is a departure from the low-alcohol, light summer sake style, and is more like a munchy, dirty summer night. Despite the strong flavor, the sharpness of the sake is very refreshing, so it is easy to drink. Of all the summer liquors, this one is my favorite. Thank you very much for your kindness!

Summer sake from my favorite brewery, Kanbai! I'll have to drink it! The Kamidachi aroma is a fruity ginjo aroma, but it's moist and calm, very nice! The aroma of Kanbai's sake is so nice! This Sake has a full mouth feel and some sweetness at the beginning. The flavor of this Sake is bigger than other Seitoku Sake but it still has good balance. Very good with big flavor foods like mapo tofu.

This Sake has an initial sweetness and a full mouth feel. There is a hint of cedar as the alcohol clears my pallet. Very good with big flavor foods like yakiniku. Seitoku has many Sake that I enjoy.

This Sake is light, refreshing and easy to drink. I am revisiting this Sake because it has been a while since I last drank it. I enjoy the mild flavors of apple and melon with a clean, short aftertaste. This is a refreshing and well balanced Sake.

@Osawa of Sake Rice used is unknown Not fruity at all. It is not light and dry, and has aged well. The taste is a mellow type with a strong umami. The aftertaste is surprisingly refreshing for a Daiginjo. It is what is called "the sake of sake.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

I got "Uonuma de sakou" as a souvenir....sold only in Minamiuonuma, the concept is good ⭕️...I couldn't find a good marriage...but I'm sipping it with yellowtail sashimi and okonomiyaki...Niigata sake 🍶 traditional light dry taste.... ...I've had it a few times...it's a good ⭕️ as a food sake 🍶!
