Tonight, our first in the series, Aizu Otokoyama Kai from Fukushima Aizu ✨. First of all, the specs are 100% Fukunoka with Jungin polish and 16% alcohol. The aroma is clear with a hint of pineapple and a mojito-like flavor in the second half. The attack is soft and sweet just like the aroma, but soon the acidity and bitterness overtake it and it has a nice crisp finish 👍 It is perfect as a mealtime drink and is very easy to drink without feeling too much alcohol 😋.

Otokoyama Brewery is located in Aizumisato-cho, Onuma-gun, Fukushima Prefecture, which is different from Kaito Otokoyama. The brewery was dormant for a while, but has restarted again. It is a fresh, raw ogara-mi sake. It is slightly carbonated and tastes great with the bitterness of the oli.

Today, I'm going to have a pure blue. I mean, I went to Tomikunishiki yesterday to buy the Galaxy label. Unfortunately, it was sold out for mail order😭. Basically, I'm the kind of person who thinks that shipping costs are less than the cost of gasoline, so I thought I'd go and drive an hour or so to get there, but I didn't realize how popular the Galaxy Label was. I had no choice but to buy this Ikarashi Tokubetsu Junmai. It's sweet but delicious ☺️. I think I'll mail order it properly next year. I should have bought either Kamesen's SEL or Gohashi, which I saw at the liquor store on my way home.

I went to buy sake for my annual plum wine yesterday and found this. It's a sake made by reviving the oldest sake rice called Shiratama (test brewed sake). It tastes like Tomikunishiki, full and mellow... very delicious☺️. I love it after all. It's so delicious 😆.

This was one of the bottles I bought at the recent New Sake Festival. I was going to miss it this year, but it was on sale so I bought it. It was cold and had a little bit of cemedine smell in the mouth...and then a spicy taste. It doesn't leave much of a aftertaste either. Delicious.

This seems to be a regular sake of Amanurin! After bottling, the sake is matured slowly in the brewery. Mellow and full-flavored with a lot of umami!

The rice used is Comet from Hokkaido. You can't ignore the sake made with Hokkaido rice, can you? It has a clear and refreshing taste typical of Comet. It has a gentle acidity and a good sharpness, so you can drink it easily. It is well-balanced with a good taste of rice. I️ think it's a versatile sake that can be used in any situation. I have drunk Tenyurin many times, but I'm not sure if this is a good idea or not.

A sake brewery in Shiwa-machi, Shiwa-gun, Iwate Prefecture, the birthplace of the Nanbu Touji clan. The oldest sake brewery in Iwate, Azumamine Sake Brewery. Founded in 1684, which means... Edo period (@_@) I admire the continuous efforts and wisdom of the people who have kept this taste and this brewery alive since time immemorial. That is why we can enjoy this taste now. This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. The first impression you get when you drink it is a refreshing, fresh and gentle sweetness that only sake can provide. It's a sweetness like strawberries that I've never tasted before - I think this is a taste that only freshly pressed sake can give you. It's delicious!
