I bought this one after tasting it with Daikoku Masamune at Yamamoto Sake Shop in Kuise and wondering about it. I had tasted Tomikunaga in the past, but this was the first time I bought it. This is a rice called Yatanso, which is used only by Tomikunaga. It has just the right amount of gas and sweetness. Not too sweet, but just the right amount. It is like the sweetness and umami of rice. Balanced type. I would like to try other types of rice.

This sake is brewed by Miho Imada, who was selected as one of the "100 Women of the Year" in 2020. I've been wanting to try this sake for a long time because of its high reputation in magazines and without any special glasses. The first sip was soft and clear like water, and then I felt the sharpness. On the second sip, you can taste the umami and acidity. There is also a slight pleasant bitterness at the end. It is characterized by the softness of soft water and a clean mouthfeel with no miscellaneous flavors. And yet, it is a modern dry taste with a wide range of flavors, which I personally like very much and it's really delicious! The aroma and taste are not strong, so it doesn't seem like there is a "this" kind of weapon, but it has no peculiarities and anyone can enjoy it, so I take my hat off to its broad-mindedness. You can drink it all the time... or infinitely. I am also amazed at its wide range of defenses, going very well with greasy dishes like fried foods and crisp salads. To use a baseball player's analogy, it's like Shuta Tonosaki of the Seibu Lions, who can defend any position at a high level.

When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. It is very fruity because of the use of CEL-24. However, it is not as sweet as Kameizumi, Toyonoubai, or Kaygetsu. It is sweet and bitter. The other one I haven't tried is Bikuyo's CEL-24. I think it's a little bit sweet and bitter like Shibotan's CEL.

I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! I drank it at a tasting and bought it because it tasted better than the sake labeled by Machida Sake Brewery. It is high quality for about 1,500 yen. Tonight, we paired this first sake with Japanese food for dinner. Saijotsuru Jun Dai Black Label Hibi Seishin Nakadori Nama Sake✨. Tonight, our first in the series, Aizu Otokoyama Kai from Fukushima Aizu ✨. First of all, the specs are 100% Fukunoka with Jungin polish and 16% alcohol. The aroma is clear with a hint of pineapple and a mojito-like flavor in the second half. The attack is soft and sweet just like the aroma, but soon the acidity and bitterness overtake it and it has a nice crisp finish 👍 It is perfect as a mealtime drink and is very easy to drink without feeling too much alcohol 😋.
