KATSURAGAWA, which had been laid up for about a year and a half. It's too early to tell, but I'm looking forward to a summer sake on the rocks, and this time I'll have a glass of the standard warmed sake 🍶. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!

Honkin Normal Sake Yellow Label 1,800ml Alcohol added sake, koji rice 60%, kake rice 70%. This was purchased when we tasted it at the brewery last November. After six months had passed, the umami flavor seemed to have taken over. I think it was more smooth when it was first shipped. It was stored in a hallway with a refrigerator pan, so we will enjoy it before it gets too hot. I think I like it better when it returns to room temperature than when it is cold.

I'm opening them all up because they are overstocked😅. I couldn't buy it last year and have been waiting for a year. The one I had at the Japanese sake festival was very subtle so I wanted to make sure 🤔. Fresh and fizzy. It has little sweetness, but the gasiness on top of the bitterness is very nice. This is a Junmai Ginjo Activated Sake from Kanto-no-Hana (Kanto no Hana) that I purchased at the direct sales store of Seishuzo when I went back to my hometown Gunma in the summer. In Tokyo, you often see Sei and HIZIRIZM as Sei Shuzo's sake, but this Kanto-no-Hana was the first bottle for me. The label features foil-embossed letters on a raised surface. Following the bottle-opening warning tag, I chilled it well and opened it slowly without any spurting. After stirring the lees and pouring it into a glass, bubbles gradually appeared on the inner surface of the glass. The aroma is mild, but when you drink it, you can taste the strong umami and acidity. It has a gaseous and fresh mouthfeel. It also has some classical sake nuances. It can be enjoyed on its own, but it also has a wide range of acceptability as a food sake that can be matched to both Japanese and Western occasions. This is the third sake from Gunma, following Sakiyami and Oze no Yukidoke. There are many other sake that I would like to try, such as Ryuki, Machida Shuzo, and Tsuchida. I will continue to enjoy sake from my hometown little by little.

I bought this one after tasting it with Daikoku Masamune at Yamamoto Sake Shop in Kuise and wondering about it. I had tasted Tomikunaga in the past, but this was the first time I bought it. This is a rice called Yatanso, which is used only by Tomikunaga. It has just the right amount of gas and sweetness. Not too sweet, but just the right amount. It is like the sweetness and umami of rice. Balanced type. I would like to try other types of rice.

This sake is brewed by Miho Imada, who was selected as one of the "100 Women of the Year" in 2020. I've been wanting to try this sake for a long time because of its high reputation in magazines and without any special glasses. The first sip was soft and clear like water, and then I felt the sharpness. On the second sip, you can taste the umami and acidity. There is also a slight pleasant bitterness at the end. It is characterized by the softness of soft water and a clean mouthfeel with no miscellaneous flavors. And yet, it is a modern dry taste with a wide range of flavors, which I personally like very much and it's really delicious! The aroma and taste are not strong, so it doesn't seem like there is a "this" kind of weapon, but it has no peculiarities and anyone can enjoy it, so I take my hat off to its broad-mindedness. You can drink it all the time... or infinitely. I am also amazed at its wide range of defenses, going very well with greasy dishes like fried foods and crisp salads. To use a baseball player's analogy, it's like Shuta Tonosaki of the Seibu Lions, who can defend any position at a high level.
