Tonight, I'm back at work after GW, but naturally I'm not very excited 🥴. This one is brewed with Dewa Sanzu and Kyokai No. 6 yeast. The aroma is mild without being showy. It is a versatile sake with a soft sweetness and acidity of cucumber and herbs and a clean aftertaste that is also very sake-like 😊. It is as delicious as the rumors say 😋😋😋😋😋.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house. As you know, the specs are as perverted as you can imagine 🤣 it is made with Dewanosato x 66% koji ratio x 66% milled rice ratio x Kyokai No.6 yeast 🤣. The taste is very pleasant with the strong acidity of triple the koji, and it is easy to drink. It is not white koji, but it reminds me of a certain cat sake 😺.

Tonight, I opened a bottle of this one to accompany my dinner of kochi and kampachi sashimi and squid cod roe 💁. La Jomon Six Nama Sake 2023BY✨ We happened to have a lot of Six Nama Sake on hand, so we'll have a quick bottle. When I poured a glass of chilled sake, it had the usual mild uri aroma, a beautiful acidity, a little sweetness and citrusy flavor like Pocari, and the second half was a mix of astringent, bitter, and spicy flavors. It can be served alone or as a mealtime drink. I'm going to try the "Murasame" that some of the connoisseurs in the area are trying later 🙌

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

I bought this one after tasting it with Daikoku Masamune at Yamamoto Sake Shop in Kuise and wondering about it. I had tasted Tomikunaga in the past, but this was the first time I bought it. This is a rice called Yatanso, which is used only by Tomikunaga. It has just the right amount of gas and sweetness. Not too sweet, but just the right amount. It is like the sweetness and umami of rice. Balanced type. I would like to try other types of rice.

This sake is brewed by Miho Imada, who was selected as one of the "100 Women of the Year" in 2020. I've been wanting to try this sake for a long time because of its high reputation in magazines and without any special glasses. The first sip was soft and clear like water, and then I felt the sharpness. On the second sip, you can taste the umami and acidity. There is also a slight pleasant bitterness at the end. It is characterized by the softness of soft water and a clean mouthfeel with no miscellaneous flavors. And yet, it is a modern dry taste with a wide range of flavors, which I personally like very much and it's really delicious! The aroma and taste are not strong, so it doesn't seem like there is a "this" kind of weapon, but it has no peculiarities and anyone can enjoy it, so I take my hat off to its broad-mindedness. You can drink it all the time... or infinitely. I am also amazed at its wide range of defenses, going very well with greasy dishes like fried foods and crisp salads. To use a baseball player's analogy, it's like Shuta Tonosaki of the Seibu Lions, who can defend any position at a high level.

Immediately after opening the bottle, it was dry and dry, perhaps due to the 17% alcohol content. I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

Honkin Normal Sake Yellow Label 1,800ml Alcohol added sake, koji rice 60%, kake rice 70%. This was purchased when we tasted it at the brewery last November. This sake was tasted along with the Junmai Ginjo I posted earlier. We were there when the store opened on the first day of tasting and sales, so all the sakes were unsealed, so we were able to sample them in fresh condition. I recommend going on Wednesday when the store opens 😆. It is Rokumaru with 60% rice polishing ratio. It is the same as Shinomine. It has more richness and umami than Junmai Ginjo. It is suitable for warming up.

KATSURAGAWA, which had been laid up for about a year and a half. It's too early to tell, but I'm looking forward to a summer sake on the rocks, and this time I'll have a glass of the standard warmed sake 🍶. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!
