The third drink outside is Honkin😆. Dry Taichi Clear and dry, with a hint of sweetness and bitterness. It was perfect as a sake for a meal with a nice sharp taste.

Honkin Normal Sake Yellow Label 1,800ml Alcohol added sake, koji rice 60%, kake rice 70%. This was purchased when we tasted it at the brewery last November. After six months had passed, the umami flavor seemed to have taken over. I think it was more smooth when it was first shipped. It was stored in a hallway with a refrigerator pan, so we will enjoy it before it gets too hot. I think I like it better when it returns to room temperature than when it is cold.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.

After a moment of sweetness, spiciness and sourness come at once. The assertiveness is modest, so it may be suitable as a food sake. I noticed after drinking 4 kinds of sake that I may not like the unique flavor common to all the sake breweries here.

It is sweeter than the other Shugetsu wines I've had. It is refreshing and fruity, but a little peculiar. The rice is probably Yamadanishiki. It is fruity and on the sweet side, but not fruity. This costs over 1000 yen for 300ml....

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

Rice used is unknown It is a unique sake. The palate has a moderate sweetness, but not so much that it can be described as dry. The umami spreads slowly, The acidity is very effective and tight. This is also our first time to visit this brewery. I'm glad to see that they have a lot of unpasteurized sake. I completely forgot about the bad things at work and went into drinking mode. Tasted and purchased. Firmly sweet but refreshing. Maybe citrusy? Dangerous one because of the low alcohol content. I wish Shirobotan would release fresh sake. It is sweet, but the alcohol taste is a little strong. I feel it is a bit strong. I think it tastes better after about 2 days than when it is freshly opened, even though it is fire-aged. It is similar to the impression I had when I drank it at a tasting.
