I've had Kanazawa-ya from the same brewery at an outing, but this is my first time drinking it. I had never heard of rice called "Takaneminori" before. It has a fresh aroma with a hint of cemedine. The impression is that it fades out after a pause from the refreshing feeling, followed by a gutsy sweet flavor. It is a new sake, but it has a strong umami.

Enjoy cheap sushi at Totoro, a popular standing sushi bar under the elevated railway tracks of Himeji Station. Although it is a stand-up style sushi bar, there is always a long line of customers because of the high quality of the food. Since I was there, I asked for a local sake, Yaegaki. It was not sweet, but it was not dry either. It was about medium spicy. I am not talking about curry. I had it cold, but I feel it is all-around good at room temperature or hot. It's great for a kotteri type of stuff.

Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. It is slightly effervescent and has a unique flavor. Sweet but cosmetic like no other aroma. A little nutty in the second half. I thought it was a little peculiar. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.

Next up was the Ittiki Senzan Comet Nama-no-Hara Sake. The only sake from Gifu that I know of is Ikki Senzan, so I thought I'd give it a try. It was a brand that had just been opened. They use a yeast called "Kyo no Koto" which was jointly developed by Sasaki Shuzo and the Kyoto City Institute of Industrial Technology. If that's the case, why don't they write it on the label? It's quite floral, but banana-like. At the end, the sourness kills it. So far, I don't think I've had a bad bottle of Fuoh.

Japanese Sake Festival @ Osaka Bay Tower (¡Ω) Very yellow. Delicious and mellow as expected! Although from the Fushimi brewery, this sake would definitely be better suited to those who prefer San-in sake! There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023.
