This is another favorite of mine, Yamama, this time an active junmai ginjo. The lid almost flew off! Close it immediately! I was so close... 5 minutes after opening the bottle, the taste is sweet and bitter with a strong bitterness and sparkling rice... I can't believe it's a sake anymore... delicious... and I can drink it again at 🙆♂️ as a food sake! I want to drink it again!

Despite the old-fashioned label, the impression is clean and modern without any cloying taste. Surprisingly, it is quite tasty. Purchased at Sakai Meizo. Unzan used to be produced and sold under the same brand name at several breweries, including this one and Yoshinoya in the Zenkoji temple gate town. Currently, Sakai Meikozo is no longer making sake, but has a soba noodle shop, cafe, and souvenir shop in a renovated brewery building, and the old brewery is open for tours. The sake sales corner is modest.

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. If this is the case, it's a special pure Cemedine.

Very ordinary cup of alcohol (´¦). You can taste a good sweetness with no added sugar. I'm happy with the taste, which is very typical for a cup of sake. It still tastes better when heated. I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region. They have a wide selection of sake brands such as Rairaku, Kinshi Morinori, Shonosato, Hizen Kurashin, Chitose Mori, Kikunoi, Hakuryu (Fukui Prefecture), Ayagiku, Hanashimi, Zoka, Morinokura, Rokkasen, Tenzan, etc. Sake made with Sanuki olive yeast. Fresh, rich, sweet and acidic. The acidity is impressive, but there is also a bit of spiciness in the latter half. It has a light mouthfeel for its alcohol content, perhaps due to the acidity. It does have a slightly tropical flavor.

Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

Pitchy fresh. Light mouthfeel with a green apple-like flavor. The sweetness is moderate and a little bitter. Not too sweet and easy to drink. If I drink sake, I should also drink wine. Kenzo Estate's aska 2013 is over 30,000 yen. I only had one glass, the rest was sake 😅.

Enjoy cheap sushi at Totoro, a popular standing sushi bar under the elevated railway tracks of Himeji Station. Although it is a stand-up style sushi bar, there is always a long line of customers because of the high quality of the food. Since I was there, I asked for a local sake, Yaegaki. It was not sweet, but it was not dry either. It was about medium spicy. I am not talking about curry. I had it cold, but I feel it is all-around good at room temperature or hot. It's great for a kotteri type of stuff.
