Yesterday we went to Bicchu Matsuyama and Kibi Tsu! We were worried about rain, but it was really fortuitous that it shifted and we saw some sunshine. The view over the magnificent stone walls and town at the top of the mountain was exceptional ✨. Then we visited the Kibitsu Shrine, with its long corridor and historic appearance. The long corridor and historic appearance of the Kibitsu Shrine that we visited afterwards was truly heartwarming 🍑. After exploring, we crossed the Seto Inland Sea and drank a glass of Kibi-shu 🍶. When you open the bottle, you will find a deep aroma of nuts and chestnuts. The mouthfeel is slippery and dry. It is full-bodied with a punch of acidity and astringency, as well as a full-bodied rice flavor. It has a presence like nuts and bitter chocolate. However, the stimulation of the hot, acidic, and astringent taste tightens it up like a whip, and it has a good salty taste with a firm edge!

A bottle given to me by my predecessor, who recently reached retirement age. He said it was a thank-you for the 3 kg of new rice he delivered every year during his tenure, which he called a "taste test. Rice has become sake! The nose has a fruity ginjo aroma, but the fragrance is subdued. The mouthfeel has a gentle, round sweetness and a satisfying umami. The fruity feeling that passes through the nose and the mild acid bitterness that comes at the end disappear slowly and gently. I had an image that Houyo was not my favorite, but this is good! This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. The aftertaste has a good accent of alcohol and a solid flavor. Overall, it is a good sake with a cohesive taste that makes you realize again that the alcoholic version is better for the Daiginjo class.

This sake was purchased at the Tokyu Hands Tohoku Fair last month. I opened the bottle after drinking all the Miyaizumi. It has a gorgeous sweetness that rushes in from the first sip! It doesn't have the aftertaste of raw sake, and it goes down nicely. It's definitely good. This sake is brewed from 100% Akita Sakekomachi polished to half its original strength. Tonight we will drink it at home. I have a bad feeling about this...
