It arrived just a few minutes ago. This morning, the sake was pressed early in the morning. It seems I forgot to buy it last year, but this year I reserved it and bought it. I couldn't stand it, so I had a cup in my inoguchi. I love Tomikunishiki, but this year's Risshun morning pressing has a little acidity, a clean throat, and not much of an aftertaste. It's delicious!

This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

It has a faint smell of cemedine, and a somewhat chemical 🧪 atmosphere in the mouth, but it has a nice, clean taste that doesn't interfere with the meal 😊. The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. The aftertaste has a good accent of alcohol and a solid flavor. Overall, it is a good sake with a cohesive taste that makes you realize again that the alcoholic version is better for the Daiginjo class.

The sake rice is Gin-no-sato, developed by the National Institute of Agrobiological Sciences for western Japan. This is the third bottle of sake rice research. We were careful to open the bottle. Last week I visited Dewano-Fuji at Hankyu Department Store, but I went to Umemoto Sake-ten in Nishinakajima because I thought I could find more variety at a special distributor. (Note that they have moved from the location shown on the map of Sake-no-wa, and they have a corner bar inside after 4:00 p.m.) I was a bit lost, so I asked the waitress and she let me try a sample. Melon-like fruity sweet taste. Slightly refreshing? It was delicious, but Junmai Arabashiri seemed rarer, so I bought that one 😊.

The beautiful kaleidoscope-like label is impressive. The taste is sweet with a hint of bitterness at the end. It is refreshing and crisp, but the screw was unusually hard to open, so I think it should be improved. The Junmai Unfiltered Nama-jyu I drank at the end of the year was cheaper and much tastier.
