Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

I used to drink Honored Kunimitsu Plum Wine, but this is my first time. It has a clear mouthfeel, but the flavor of lactic acid bacteria comes through. Outside drinking. Ordered by the impact of the name. When poured, it smells moist and sweet. The taste is as expected (?). The sweetness is strong. When tasted, it has the flavor of rice. There is a slight astringency in the aftertaste. The mouthfeel is clean, with a watery sensation and a nice clean finish. There is a distinctive sweet aroma. It is a mellow, sweet sake, and you can sense the careful craftsmanship. Later I looked it up and found the word "Toyobai" 😳. I didn't realize it was so 😚.

Sake brought back from our trip to Niigata Sake recommended by the lady who was selling it. Very gassy 💨 Sake with a strong moromi Dry and crisp 💪. It's a nigori sake, but you can drink it with gusto as a food sake 🎵.

For my fourth cup, I decided on the "Koshihikari" which caught my attention! The palate is clean and refreshing, but as you taste it, it mellows out a bit with a banana feel. The acidity tightens it up so that it does not interfere with the taste, so it is well-balanced and easy to drink👍.

180ml Nishinoseki bought at my usual liquor store. My first Oita! I thought it would be sweet, but the aftertaste is a bit spicy. But it's delicious. It tastes like I'm drinking it.

We stock sake from Kyushu, which we don't have much of locally. The first one is Nishinoseki. The aroma and taste are quite hard. The first punch worked on my hungry body. It made me hot from the back of my throat to my stomach.

The fifth sake in the lineup was this one, which boasts the lowest sake level of -14. Nishinoseki Nigori Sake. TENJOJI Junmai Unfiltered Nama-shu 720ml Rice: Gohyakumangoku from Okuidumo, Tsuyahime from Shimane Rice polishing ratio 60 Alcohol 17%. This sake was bundled with the February hanpukai. Drinking Tenshuu makes me want to go to Izumo and eat soba noodles😃. The aroma of this one is very distinctive. It has a pleasant smoky aroma. I guess you could call it fragrance 😁.

Tenshitsu Haru no Tsuki Slightly sparkling Junmai Nigori Nama Shu 720ml Rice polishing ratio: 60 Alcohol content: 18%. I opened a bottle of Tenshitsu that was included in the February hanpukai. It has a very complex flavor. It is fresh but also has a bitter taste, gasiness, and a slight smokiness. It tastes like an adult. Interesting.

It is a gift from Niigata 🙏. Yukichubai is a classic light and dry wine. but this one seems to be a seasonal summer sake. It is a seasonal summer sake with a refreshing taste🎶. It is slightly sweet and has a nice sharpness! The alcohol content was high, so it was better to drink it on the rocks. It was better to drink it on the rocks👍

Back in the day, Niigata's Sanbai was an extremely hard-to-find brand. I often visited Niigata Takata on business and was often presented with it. At the time, I had no interest in sake at all and almost never went through with it. Now, in 2021, Koshino-Kanbai is easily available at Aeon. Mine-no-Hakubai is also often seen as Hishiko at local liquor stores. However, Yukinubai is not so easy to find in my hometown. So, I got it on a business trip to Joetsu. I paired it with a taste of spring, firefly squid and broccoli with olive oil. It has a moderate aroma of cemedine or banana. It is sweet. It harmonizes with the sweetness and bitterness of firefly squid and broccoli. Lastly, there is a final bitter taste that is refreshing and delicious in the mouth!
