January 2, 2024 Banquet at home. Drinking sake with my sister who is back home. The fourth and last sake of the day is The fourth and last sake of the day was Asahi Wakamatsu Junmai Sake sake. It was purchased at Amaha Shuho in Tokushima City. I had heard from my sister that it was delicious, and I was curious about it. I was able to get it when I visited the sake brewery in Seitama. I was finally able to get my hands on it when I visited Seitama's sake brewery. This time we changed things up a bit and bought a bottle of Kuromatsu Kenrishi❣️, which we fell in love with at first sight because of the shape of the bottle and the coolness of the label. I had it lukewarm with my homemade oden🍢🙏. It's also good that you can heat up the whole bottle in a ding-dong! It has a bit of an alcoholic aroma, but I don't mind it too much. It's just as spicy and easy to drink 😮❗️ It's like an evolution of the classic type of sake? and I enjoyed it with food 😚. The bottle is stylish and I'd like to keep a bottle in stock for when I want a little heated sake 👍 Thanks for the food!

We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

The only place I can think of that uses Nojoho is Okutanba. The overall impression is gentle and the taste comes slowly. It looks like wood, grass, or herb. It also has a classy atmosphere. The sake here is not my favorite, but when I find it, I buy it for some reason.

I ate okonomiyaki, went to an izakaya (Japanese style bar), and at the end, I got the last of a bottle of sake that the owner recommended 😊I got the last of a bottle as a courtesy 😋. It's like a summer sake with a refreshing taste 😚 and a crisp aftertaste 😋. It went well with oysters, small sardines, conger eels and other specialties. ❤️ I'm going to work hard tomorrow and then go back to the liquor store 🥳.

Purchased at Sota Watanabe Shoten in August. When I went camping in the summer, I attended with melons from Yamama and Niida Zenshu, but both were gone in an instant, so I didn't raise them to check in 😂. Such is the classic brand of the Niida head family. Did I drink it cold (room temperature) at first? I don't remember. (LOL) I thought it was very tasty when I drank it heated (probably hot)! I thought it was delicious! The complex acidity and umami of the rice, unique to the brewer's yeast, is extended by the warming up of the sake! I love the way the flavor expands when heated. I think it tastes great chilled, but I wouldn't hesitate to recommend heating it up. I might want to keep this one on hand. I'm glad I don't have to put the classic in the fridge. I would love to have a fridge for sake, but...

Personally, I bought this sake because I am in a mini-boom for a higher level of sake other than sweet and fruity. Here we go! The aroma is... What is this? It smells simple and sweet, like freshly baked bread. I have never tasted a sake with such an aroma. The mysterious brewing water is soft, slightly viscous, mineral, and translucent. The sweetness is like freshly baked bread, and the robust, tight rice flavor is as vibrant as ever. There is also a hint of acidity, which is probably due to the use of the sake yeast, but at any rate, it is full of umami. Tamura is a gem that is profound yet light, powerful yet gentle, and a contradiction in terms. It disappeared with a slight sharpness in the back of the throat. In recent years, an increasing number of popular sakes are being hailed as wine-like sake with a sweet and sour taste like grapes. Of course, I like these sake as well. But if you ask me which sake made from rice has the weight, lingering aftertaste, complexity, and simplicity of red wine, I would drink Tamura without hesitation.
