Another bottle was opened at the Kizuna Festival. Golden crystal that saw the light of day at Izakaya Shinkansen. Gold Crystal label expressed with a characteristic figure. It is one of my personal favorite labels. The top-tasting aroma has a very classical sake flavor. The mouthfeel has a light umami from a hint of sweetness. First contact is lighter than expected. The finish is again full of sake-like aftertaste, with a mild acidity and a strong bitterness. I had imagined it to be a more mellow and stand-alone sake, but it is considered to be a high performance food sake. During the festival, I served it with tempura and dried scallops that I bought and brought with me, and it was quite good! Thanks for the food!

Tonight I'm having this one 🍶. I got this on my trip to Fukushima last month! I've been wanting to drink this since I saw it on Izakaya Shinkansen 🍶✨. They are the only sake brewery in Fukushima city😃. Mellow, refreshing, oicy❕. The aroma is slightly fluffy 💠. Slightly crisp but still mild 🌸🍶✨. This is a great one ❕. I'm glad I found you 😆. I also love the fukushima saké💗. It's very tasty.

It has a good flavor of rice when it is on the lees 😄. The taste is silky and clean, probably due to the use of Koshihikari rice. The last one is Fusozuru. It will be served warm. The top-tasting aroma is that of thick rice. The mouthfeel is clear and the umami of rice is directly conveyed. The aftertaste has a slightly matured or aged feel to it, but I think this is what makes the umami so convincing. The finish is soft and fluffy, with a soft acidity and astringency. The image is quite dandy and austere. Fuso is an old Japanese alias, but when I think of Fuso, I think of the Mitsubishi Fuso truck or the battleship Fuso of the Imperial Navy. In the arcade game "1943," which I was addicted to when I was in junior high school, the sinking of the Fuso was the climax of the first half of the game. I like the sound of "Fuso". Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

It says Gotenzakura in small letters on the lower left corner of the front label, but I was told that it was a PB from a local liquor store. Sake made with LED dream yeast from Tokushima🍶. The aroma on the nose is gorgeous and fruity. When you put it in your mouth, you can taste the smooth sweetness and umami. It also has a fruity overtone. This sake has a good aroma. It was delicious 🍶✨.

［Fukui Spring New Sake Festival 10] I'm on my 10th cup of sake 😁. I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶. Unnoi Junmai Ginjo Nama Genjyo. Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste. I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This bottle was given to me as a birthday gift last year. I've been accumulating a stock of sake, so I decided to drink it slowly. It's a rare opportunity to see a bottle of sake in a tobin enclosure! It makes my heart dance ✨. When you open the bottle and pour it, you can smell a slight ginjo aroma. It is almost scentless. The mouthfeel is very clean, but the soft, milky sake quality and subtle sweetness of the rice gradually covers the tongue! The spiciness and the strength of 16% alcohol can be felt in the latter half of the bottle, but the overall flavor is moderate. I think I have not had such a clear sake since I drank the highest quality sake of "Akagisan" (12,000 yen for 720ml)! It is as pure as a gentle breeze. It quietly accompanies you from the beginning to the end. The taste is the very embodiment of "elegance. It is a good bottle to drink by itself or to enjoy as a food wine! Enjoy it carefully over the course of the day👍.
