I managed to get over the train when I was with Yuka-chan, but I did it on the way home from drinking with the second daughter (I am the eldest) of the Otsubonez (three bureau sisters) in my department. I lost my memory at the next station where we sat down, saying "I might fall asleep if I get to sit down. Why didn't I wake up 5 minutes before? The train in the opposite direction was the last of the day and I had to wait 20 minutes. I managed to only sleep on the platform. Then I had a blast sleeping in the cab as well... Now, to get back on track, here is the evening drink of the day. The aroma was sweet, but when I drank it, the sweetness was not as strong as the aroma, and there was a good balance of sweetness, sourness, and finally bitterness. It went very well with a little bit of shibi-shibi (bean-curd soup with red pepper paste).

Another bottle was opened at the Kizuna Festival. Golden crystal that saw the light of day at Izakaya Shinkansen. Gold Crystal label expressed with a characteristic figure. It is one of my personal favorite labels. The top-tasting aroma has a very classical sake flavor. The mouthfeel has a light umami from a hint of sweetness. First contact is lighter than expected. The finish is again full of sake-like aftertaste, with a mild acidity and a strong bitterness. I had imagined it to be a more mellow and stand-alone sake, but it is considered to be a high performance food sake. During the festival, I served it with tempura and dried scallops that I bought and brought with me, and it was quite good! Thanks for the food!

Tonight I'm having this one 🍶. I got this on my trip to Fukushima last month! I've been wanting to drink this since I saw it on Izakaya Shinkansen 🍶✨. They are the only sake brewery in Fukushima city😃. Mellow, refreshing, oicy❕. The aroma is slightly fluffy 💠. Slightly crisp but still mild 🌸🍶✨. This is a great one ❕. I'm glad I found you 😆. I also love the fukushima saké💗. It's very tasty.

The last one is Fusozuru. It will be served warm. The top-tasting aroma is that of thick rice. The mouthfeel is clear and the umami of rice is directly conveyed. The aftertaste has a slightly matured or aged feel to it, but I think this is what makes the umami so convincing. The finish is soft and fluffy, with a soft acidity and astringency. The image is quite dandy and austere. Fuso is an old Japanese alias, but when I think of Fuso, I think of the Mitsubishi Fuso truck or the battleship Fuso of the Imperial Navy. In the arcade game "1943," which I was addicted to when I was in junior high school, the sinking of the Fuso was the climax of the first half of the game. I like the sound of "Fuso". Rice used is Yamadanishiki This sake has been aged for three and a half years. I had kept this sake at a friend's store when Corona first became popular, and I had lost track of the right time to go there. The other day, I finally met it. Although it was protected from ultraviolet rays, it could not withstand the severe temperature changes and had completely "aged". It was a shame, but he kept the store going strong, Thanks for saving it for us when we moved.

This was my first Koganezawa, a gift from someone. It is a Junmai Daiginjo made from Gohyakumangoku, so I had an image that it was quite refreshing, but it tasted just as it should. But it also has a strong umami of rice and is easy to drink without any peculiarities 😆 It is easy to pair with meals and I was off in no time 🤣. Miyakanbai's PB brand Miyamanishiki 55% Koji, Manamusume 65% Kake The aroma is rather subdued, but it has a clean, fruity aroma of white peaches, pears and apples.
