It is the first Kamikawa Taisetsu. I was attracted by the white koji and bought it. The aroma is of citrus and lactic acid, with some caramel. In the aftertaste, there is a touch of vinegar. After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

Karahashi label by Homare Sake Brewery. Unfiltered unpasteurized sake made from sake rice Yume no Kou. Fruity ginjo aroma. The sake I chose when I returned home for Obon was Gold Junmai Daiginjo by Popular Sake Brewery. This sake brewery is very particular about the traditional method of making sake, and everything is made in wooden vats. It is a junmai daiginjo that is polished to 50%, so there is no cloying taste at all ✨It starts with an elegant sweetness and rice flavor, with the aroma of the wooden vat and a slight bitterness at the end. Are you a member of the Shuunin? Shu-in opening! The aroma is clean 🍎. Personally, I don't feel much sweetness, but a nice clean acidity and a bitter taste at the end 😋. It is said to be very polished, but the specs are not disclosed in case you are interested! 1500 yen is cheap for a pure large class👍.

Koji rice is Okayama Yamadanishiki, Kake rice is Nagano Miyamanishiki, and the sake is brewed with No. 7 yeast at low temperature fermentation 🍶...the taste...mellow sweet and delicious 😋♪ Excellent balance of sweetness and acidity It's a great balance of sweetness and sourness! It's a sake that can be enjoyed in small sips, but since we're here, we're enjoying the Kanagawa marriage with Odawara local fish assortment and fried kamaboko from Suzuhiro......yummy!
