After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

Enjoy cheap sushi at Totoro, a popular standing sushi bar under the elevated railway tracks of Himeji Station. Although it is a stand-up style sushi bar, there is always a long line of customers because of the high quality of the food. Since I was there, I asked for a local sake, Yaegaki. It was not sweet, but it was not dry either. It was about medium spicy. I am not talking about curry. I had it cold, but I feel it is all-around good at room temperature or hot. It's great for a kotteri type of stuff.

After drinking Shikishima about a month ago, I became interested in Fukumochi Sake Brewery (Tenga Nishiki) who helped me with Shikishima Sake Brewery! I looked up where they sold it and was surprised to find a special distributor near me 😲. I ended up buying three different kinds! It's like a muscat with a standing aroma! The first sip gives the impression of being rich, but the mouthfeel is clear. I didn't taste much sweetness. The rich taste is followed by the umami of the rice, which is also heavy and robust. There is a slight alcohol aftertaste. The bitterness is also moderate~! If I have a chance, I'd like to try the raw sake.

Junmai-shu, 65% polished rice, brewed by Mr. Tanaka in a sake brewery located in the rice paddies. Tanaka Rokuugo. I knew it was delicious from everyone's postings on Sake no Wa 😊. I thought it would be more of a gusto, but it was a delicious sake with a gentle rice flavor and a light texture♪ Kyushu has an image of shochu, but I was surprised at the high level of sake as well, including Tanaka Rokuugo, Koei Kiku, and Sundo 😆.
