Another bottle was opened at the Kizuna Festival. Golden crystal that saw the light of day at Izakaya Shinkansen. Gold Crystal label expressed with a characteristic figure. It is one of my personal favorite labels. The top-tasting aroma has a very classical sake flavor. The mouthfeel has a light umami from a hint of sweetness. First contact is lighter than expected. The finish is again full of sake-like aftertaste, with a mild acidity and a strong bitterness. I had imagined it to be a more mellow and stand-alone sake, but it is considered to be a high performance food sake. During the festival, I served it with tempura and dried scallops that I bought and brought with me, and it was quite good! Thanks for the food!

Tonight I'm having this one 🍶. I got this on my trip to Fukushima last month! I've been wanting to drink this since I saw it on Izakaya Shinkansen 🍶✨. They are the only sake brewery in Fukushima city😃. Mellow, refreshing, oicy❕. The aroma is slightly fluffy 💠. Slightly crisp but still mild 🌸🍶✨. This is a great one ❕. I'm glad I found you 😆. I also love the fukushima saké💗. It's very tasty.

Today, I'm going to have a pure blue. I mean, I went to Tomikunishiki yesterday to buy the Galaxy label. Unfortunately, it was sold out for mail order😭. Basically, I'm the kind of person who thinks that shipping costs are less than the cost of gasoline, so I thought I'd go and drive an hour or so to get there, but I didn't realize how popular the Galaxy Label was. I had no choice but to buy this Ikarashi Tokubetsu Junmai. It's sweet but delicious ☺️. I think I'll mail order it properly next year. I should have bought either Kamesen's SEL or Gohashi, which I saw at the liquor store on my way home.

I went to buy sake for my annual plum wine yesterday and found this. It's a sake made by reviving the oldest sake rice called Shiratama (test brewed sake). It tastes like Tomikunishiki, full and mellow... very delicious☺️. I love it after all. It's so delicious 😆.

This was one of the bottles I bought at the recent New Sake Festival. I was going to miss it this year, but it was on sale so I bought it. It was cold and had a little bit of cemedine smell in the mouth...and then a spicy taste. It doesn't leave much of a aftertaste either. Delicious.

(ますますます +. We had Takasago from Kiyamasa Shuzo 😀. It was completely different from Jikan. I'm not sure if I'd drink it with refrigeration, or if the aroma would be milder. No? I'm not sure if it's too acidic or not when I drink it 🤔. I didn't like it, so I heated it up and it turned into a different kind of sake. I found the heated Takasago to be delicious 😀. Fukushima again today. And raw sake! Huh? No tingling sensation? And it's not so much sweet as it is...is it salty? Salty? It's a new sensation. (I'm sure I'm mistaken.) Last year? (I'm sure I'm mistaken.) It's a different image from the Aizu Nakasyo I drank last year. This is only the second time I've tasted it (correction: it was the third time 💦), so I guess I don't understand it well. Sake is so deep.

The fourth bottle brought in is Aizu Chusho. This one is also from the inventory of a junior colleague I mentioned earlier. It has the unique flavor and richness of light nigori. It has a moist finish, which gives it a gentle feeling. It is a distinctly different sake from the others we have brought in. I like this kind of sake! This kind of sake is also good! At the banquets I organize at work, I give an allowance to those who bring in their own sake. A bottle I want other colleagues to try. A bottle I want to drink with them.
