At home. First time in Saitama. I couldn't find Saitama easily, so I searched by the name of the prefecture and finally found it. The aroma is grainy and nutty. I found a suspicious looking liquor. Is it for export? I saw it in the lap of Asahara Sake Brewery and bought it. It is a carbonated sake with low alcohol content. It is carbonated after the fact, so it has a great shwashy feeling. It is good for a quick drink on a hot day, but if you want to feel the carbonation, I honestly think beer or a highball would be better. I don't think this is what people call "Japan".

Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

Karahashi label by Homare Sake Brewery. Unfiltered unpasteurized sake made from sake rice Yume no Kou. Fruity ginjo aroma. I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region. They have a wide selection of sake brands such as Rairaku, Kinshi Morinori, Shonosato, Hizen Kurashin, Chitose Mori, Kikunoi, Hakuryu (Fukui Prefecture), Ayagiku, Hanashimi, Zoka, Morinokura, Rokkasen, Tenzan, etc. Sake made with Sanuki olive yeast. Fresh, rich, sweet and acidic. The acidity is impressive, but there is also a bit of spiciness in the latter half. It has a light mouthfeel for its alcohol content, perhaps due to the acidity.
