Hououmida Hatsu Shibori Junmai Ginjo-shu As soon as the bottle is opened, the aroma is gorgeous with a strong cappuccino aroma 🍍. The taste is as fruity and sweet as the aroma, with a pineapple-like fruity sweetness! 😍. The taste is still a bit stiff, as is typical of new sake, but you can sense that the season has started 🥰🥰. The first shibori is coming out so fast...I wonder when they will start making it 💦.

Ura-Gassan -Edge- Unfiltered unpasteurized sake Aroma is quite subdued. Beautiful sweetness of vinegared iso type spreading (unlike the raw one I bought last year, both aroma and taste are mild). Banana + cool rummy sweetness with a clean aftertaste... I like it! 🥰 I bought the raw last year, so this time I tried the fire-roasted! I was surprised at the totally different taste! I was surprised at how different it tasted 🔥.

Tsukiyama innovation CITRUS Aroma is of iso-vinegar type (🍌 + a hint of yogurt). Mouthfeel is rather mild! When swallowed, it has a strong citric acidity. But it is not harsh because of the overall lightness of the beer! (Very easy to drink as you don't feel any alcohol at all). I love the innovation series😍.

Tasake Junmai Ginjyo Kojono-Nishiki The aroma is a gorgeous capsicum Mouthfeel is pineapple with a little bit of acidity 🍍. (Last year, I had the impression of a strong sweetness, but this season I have the impression of acidity.) ←This atmosphere may be the reason why the sharpness feels so good - beautiful 🤩. I buy this every year for some reason - Tasake is a stable brand 🥰.

Chiyomusubi Junmai Daiginjo Strong 50 The aroma is a beautiful vinegared iso. An easy-drinking sake that combines cleanness with the sweetness and density typical of San'in sake! (Both sweetness and acidity are just right 🥰) I purchased this sake among the various tastings I had! 👍 There were quite a lot of different rice polishing ratios, so I want to go buy some with room to spare! 🤩

Ding Natsuyu Junmai Ginjyo Oorigarami The aroma is typical of nama-shu 🤫 (with a hint of chocolate). The palate has a strong caramel-like sweetness, but then the aroma of the rice cake starts to fade away. The mouthfeel is strong and sweet like caramel, but in the middle, it is silky soft! I'm sure you'll love it! I'll buy it whenever I see it! I'll buy it whenever I see it!

Ayau Altair Aroma: Vinegar iso + vinegar ethyl alcohol (banana and cemedine). The mouthfeel is rather light and sweet (banana🍌). But the sourness and alcohol taste comes in the middle! (I've chilled it quite a bit, but it's more than I expected!) I might dare to try it at a higher temperature range. I have to see the difference! 🧐

Kamikigen Junmai Daiginjo Koiomachi The aroma is a strong yogurt smell + iso The taste is sweet and sour just like the aroma! (The acidity lingers until much later, so it doesn't seem to be overpowered by strong flavored food!) It's been four years since I've tasted it? I have not tasted Kamikigen in four years! I wonder if it's the sake quality they were aiming for, since there's a record of lactic acid type in the past notes too? 🧐

Young Musume, Moonflower Aroma: Vinegar iso + lactic acid smell (slight yogurt) Fine gasiness and surprisingly thick sweet and sour! (It's banana + yogurt just like the aroma!) It's a summer sake, but it has a strong flavor, so it would be fun to drink it on the rocks. I'm sure it would be interesting on the rocks. According to the clerk, this brand will be a national brand from now on, I'll buy it again when I see it again! 👍

Motohira yellow special Akaban Omachi 2024 The aroma is a strong vinegared ethyl smell. The mouthfeel is quite gorgeous pineapple 🍍yellow was quite 🍍yellow last year as well, and I was relieved to find it the same this year! The sweetness and richness at first and then the cleanness that quickly fades away is also a thing of beauty 🤩. This is a PB product that I always buy when I visit! Looking forward to next year😌!

Jikin Junmai Ginjyo Senbon Nishiki Hiiri The aroma is mildly capricious (maybe a little alcoholic?). The mouthfeel is quite gorgeous pineapple 🍍, and from the middle the taste is stable as usual with Jikin's typical bitterness (no expressive power at all)! 😍 I wonder what is the bitterness in the aftertaste that is unique to Jikin...? I'd like to know more 🧐.

Haginotsuru experimental brewing sake The aroma gives the impression of strong acidity! 🥰. As expected, it is quite sweet and sour, more like a sweet white wine than a sake! (I wonder if they are aiming for this because they use a yeast that produces malic acid easily at 13%...easy to drink! 👍) ) In a good way, this sake is not like Miyagi sake! Test brewed sake is still interesting 🍶🤣.

Toyo Bijin Jundo Isshu Hakutsuru Nishiki The aroma is a modest capsule. Taste is the usual pineapple as per the Jundo Ittou series! The taste is as usual in the Jundo Ittou series! However, just like the aroma, it is not too gorgeous, but moderately fruity and has a clean and beautiful impression without being too much on the nose! (The bitterness in the aftertaste may be a bit strong) The back label has changed 😏.

Oriental Beauty Oriental Taro Raw The aroma is a gorgeous tropical fruit type! 🍍 The mouthfeel is the same gorgeous cuppa as the aroma! The fruity flavor typical of Oriental Beauty fills the mouth... but as soon as it is swallowed, it recedes all at once, leaving no aftertaste! Drink after drink after drink... 🫥. Personally, I preferred it on draft rather than fire-roasted 😘. #sake

Amego Tsuki Junmai Daiginjyo Aizan The aroma has a slight smell of iso and alcohol 🍌. Mouthfeel is different from my imagination, it's gorgeous and fruity, like a mixture of capsicum and iso! The acidity comes out and disappears with a nice sharpness... There is a clean aftertaste, which is typical of Junmai Daiginjo-Aiyama! I couldn't really tell the Aizan feeling, but it was a very beautiful sake! 😍😍

Kamo Nishiki Packaged Sake Bizen Asahi Junmai Daiginjo The aroma is a beautiful vinegary iso🍌, like a ramune. The taste is just right with a hint of sweetness? The taste is well-balanced with a hint of sweetness and just the right amount of acidity! Not too heavy, but not too light either, so you won't get tired of drinking it! I love it 🥰. It was drier than Hwang Suisen which I drank at almost the same time!

Amami Tokubetsu Junmai Lite The aroma is a hint of vinegared iso. Despite the aroma, it has a rather strong sweetness! (It's not a fruit type, but... I can't verbalize it 😭) The acidity is also quite strong, so you can feel the sharpness... Maybe it's a totally different type from the previous Tenmei...? I love discovering new products 😃.
