At home. First time in Gifu, Shirakawa-go. It's very thick, even among the nigorizake I've drunk. The aroma is like sweet sake. When you put it in your mouth, you can feel the sweetness of the rice and grain, and the sourness. The texture is tart and leaves a little residue on the tongue, but it's not unpleasant. I think it is best served on the rocks.

This is the third sake of a three-sake drinking comparison at THE CALENDER BIWAKO TOURISM, a standing drinking space that opened on 11/29 at JR Otsu Station in Shiga Prefecture. This is MONSOON, a kijo sake from the Laughing Season Sake Brewery. I love kijo sake. ☺️ Monsoon has three types of sake with different rice: Ginfukiyuki, Tamakoe, and Yamadanishiki, each with a different label depicting an artistic exotic beauty. This time we are drinking the Ginfukiyuki🌾 raw sake type. The aroma is gentle with a hint of sweetness. The rice aroma is also mild. I imagined it to be a bit more floral, but maybe that's because it's from the server. Smooth texture. The sweetness is fluffy, gentle, dark, and beautiful. The acidity is fine and gentle. The wine is smooth, flowing, and has a sharpness that seems to disappear without any change. The lingering finish is long and slightly complex. The taste perfectly matches the image of the woman on the label. It is sweet, but it doesn't linger, and finally disappears like a mirage. This is a bottle I would like to drink at home someday 🍶.

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me.
