The next drink was a Tokujiro for Joyo's distributor? Tokujiro I drank Joyo several times, but this was my first time to drink Tokujiro. I happened to see on a restaurant instagram I follow that Tokujiro was originally a joint product between a Hirakata liquor store and the Joyo Brewery. It's unfiltered, once-bottled, and heated. It's fire-brewed, but it's still slightly effervescent and has a fresh, mellow rice flavor that's really tasty 😋. I'll buy Tokujiro next time I see it.

This is the first time I have had kijoshu. It had a sweetness different from anything I had ever had before and was easy to drink.

Monsoon with an attractive label. Somehow I have the impression that Tamakae is not my favorite, but I bought it because sake really varies and I can't decide what I like or dislike based on a little experience. It is more refreshing than the previous Monsoon I drank. It's not as cloudy, so it's less kijoshu-like, but I personally prefer it. It has none of the bitterness or old dryness that I have come to associate with Tamakae. I guess the taste of sake can be completely different depending on what characteristics of the rice are brought out and how and where the sake is made. Monsoon is a sake I would like to drink regularly.

Sake from a sake brewery in the northern part of the prefecture, located in the famous production area of Hachitan-Nishiki, Hiroshima's representative sake rice. The brewery has been working on it since the rice was first produced. The name of the sake is "Miwa Sakura" instead of "Miwa Zakura," which I had been misreading for a long time. It is said to be dry, but the quality of the sake is relatively soft. It has a nice sharp aftertaste and is easy to drink. It is quite my favorite 😋. I had it cold, but I think it can also be served warm.

This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

The bitter taste is firm and cuts the sweetness 👍. Sundubu 🫕 and mini rice bowl set 😋. Deliciously spicy and tangy 😋! The lightly salty chicken rice bowl was also quite tasty 😊. Rice used is Miyamanishiki I didn't find it too harsh, but my partner, who prefers a gorgeous sweet taste, found it too much for his palate. It is true that the alcohol taste comes first, and the mouthfeel is not smooth. As the day goes by, the corners are removed and it becomes more moderate, so it might be better to go out with it slowly, but I don't dislike it in this way.
