Visiting Ise with my wife's parents! (We just went there last October 😅) Geku shrine → Sarutahiko shrine → lunch at Ise Kaku Uchingu restaurant → around the inner shrine and back to the inn for my parents and to Ise Man for myself and my wife 😁. This time, due to the space in our fridge (and budget), we only tasted the raw sake! It was refreshing and delicious 😋😋😋.

The aroma is as if it was made with hana-yosuyu in mind. However, the aroma is weak because it is fire-aged. The sweetness is also weak due to the weak aroma. Gifu All-you-can-drink ① A business trip to Yamaguchi and then to Gifu the next day! Both of us have ongoing projects, so we go there regularly, but this pattern is rare! I made it into Gifu without too much delay, so we decided to go out for a drink. Work in Yamaguchi is still going on, but Gifu has come to an end. I may come here on a spot basis, but not at the rate of 2-4 times a month or so like before. So? Let's go 😁. Gifu all-you-can-drink local sake 🤣1 hour, 2000 yen! Isn't that cheap? There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. Shin-Yamaguchi business trip (1) Kanemitsu Brewery The day before, I had no special plans, so I arrived in Yamaguchi a little early and went to the Kinko's Sake Brewery (one stop from Shinzanguchi), which I thought would be a good place to visit. Junmai Ginjo Beautiful, delicious, soft acidity and sweetness! ZORRO This is another beautiful sake, but a little different from Junmai Ginjo. It has more acidity and fruity taste than Junmai Ginjo. Daiginjo Even clearer and more beautiful. I had called in advance (but an hour before) and felt bad that the person at the brewery had to deal with me. But they treated me well! 🙇. The nigori and junmai ginjo are new sake, and the other sake are this year's. The bottles are ready, but will be bottled after tomorrow. It's ready, but they say it will be bottled after tomorrow. I bought a freshly made Junmai Ginjo because I wanted to try it.
