It is a well-balanced sake that is fruity, refreshing, and has a crisp finish. Vinegared harakkyo mushrooms as a side dish

The rice used is Gohyakumangoku. It is a light and round sake with a clean and crisp taste. As the temperature rises, the so-called "sémé" aroma and sweetness, as well as a stimulating spiciness, become apparent, giving the impression of an "aluzoe" sake❗️. I love this kind of refined Honjozo!

I thought I had had a rice from Kagawa prefecture called ◯Ide Rice, so I asked for it (or maybe it was just my imagination). I drank it after Mutsu Hachisen, so it lacked fruity flavor, but it tasted delicious when heated.

Ayaka-gun, Kagawa Prefecture. Yushin Brewery Co. Yushin Namaishu Junmai Ginjo No. 9 Yeast We are back to drinking at home. Purchased on a trip during Obon. I jumped on a label I'd never seen before and neglected to check the date, and found out that it was February 💦. I drank it cold. Not much Uitatekoso, but there is a slight graininess, with a hint of alkaloa. No mature-like aroma. The mouthfeel flows smoothly on the tongue, and the taste is full and full of rice flavor with a sense of maturity. The aroma that passes through the nose is a little matured, so it has matured a bit. But it just has an autumn-aged look to it 🤣. As the label on the back of the bottle says it is slightly dry, there is a bit of spiciness at the end, but I don't mind it too much because the umami is very strong. The high alcohol content makes it easy to drink, but it comes back with a thud later. I would like to try a freshly brewed sake once. Ingredients: rice, rice malt Ingredient Rice:100% Yamadanishiki (produced in Zaita-machi, Kagawa Prefecture) Yeast used: No.9 yeast Rice polishing ratio:55 Alcohol content: 17.5 Sweetness/spiciness: Slightly dry

August 21, 2023 Dinner at home. At the supermarket I stopped by after work. I found some mebaru sashimi at the supermarket I stopped by after work. I took it home with some sake. The sake I chose was Shimantugawa sake, which I have not had for a long time. It has a gentle The sweetness and crisp, clean taste It is the best match for sashimi. It is not flashy but it is an excellent sake that goes well with meals. It is an excellent sake.

Get this one, too, at a reasonable price😋. This is a Junmai Ginjo sake, and I could taste the aroma and flavor of the rice malt with gusto. I'm not sure what to make of it. I'm drawn to the wild side of things😅.

This is the last Maikaze series for this year. It's been quite a while, but we'll be having "Mt. Haruna" for the last time! When the bottle is opened and poured, it has a relaxing sweet aroma. It has a peachy aroma. It also has a slightly banana-like flavor. The palate is smooth, as is typical of Gunma sake, with a slight sweetness that is typical of "Maifu" and a nice astringent taste that plays an active role in the background! The astringency also gives it a mineral taste, which I personally feel is similar to the "Tenpyo Junmai" that I drank before👍. In the latter half, the astringency becomes the main taste, which reminds me of grapefruit. It melts away at the end, so it goes down smoothly! I've enjoyed many Maikaze series this year, including "Akagisan"✨I'm looking forward to next year!

YOMOYAMA NAGANO in Osaka ⑱. The Mushinzo and Kikuhide booths. At the Tachibanakura Shuzo booth, there was a brewer I spoke with at the Hankyu event, so I spoke to him. He recognized me and remembered me. The brewery's amazake Premium. It has a refreshing taste with a hint of sourness and sweetness. The cup still had some bumps, which I thought was a waste. I introduced myself as the brewer who is in charge of the production of amazake and said hello.

After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

Karahashi label by Homare Sake Brewery. Unfiltered unpasteurized sake made from sake rice Yume no Kou. Fruity ginjo aroma. The aroma of melon and sweetness, followed by a slight sourness and bitterness, finally fading away with a slight spiciness. Although it is unfiltered raw, there is no bitterness or peculiarity, and the impression is of a soft, sweet, umami taste. After a few days of drinking, the balance between sweet and spicy has improved. It is a delicious sake that is so easy to drink that it makes you want to drink more and more. ☺️

At Hankyu Department Store I had a chance to drink all kinds of sake. The nigori was also delicious. They also gave us a 1:1 blend of nigori and junmai. It was also delicious. The one that caught my attention was the Junmai sake "P&A (Panda)", Junmai sake "P&A (Panda)". It's black and white, so I guess it's 🐼😁. It is said that lactic acid is not used in the yeast stocking but is substituted with citric acid produced from white and black malted rice and fermented slowly at low temperature. It is refreshing and light to drink. Pleasant acidity and a clean aftertaste, but it was a bit unusual.

I'm not feeling well, so I've been trying to cut back on my drinking, but a classmate from junior high school, who I haven't seen in a while, invited me out for a drink and I ended up having one. Oh well. I found a nice bottle of Naotora and had it. It's so good that I remember it tastes good even when I'm drunk. It is a Junmai Daiginjo, but the freshness is dominant and the flavor is good. Isn't the difference between it and the ordinary Naotora too drastic?

I drink at a restaurant where young people seem to congregate. The owner, who says he is a big fan of Koyama Shoten, introduces us to some Koyama Shoten originals. Next to Tamitsu is Naotora. This is a brand that is not often drunk by individuals. So I can't compare this one with the regular version, but it was delicious. It was a little bit tangy.

Another bottle opened for Valentine's Day🥂. It's been waiting in the fridge for a while. I'm a little worried... It's sweet and fruity with a strong flavor. But the bitterness afterwards is quite strong. ‼︎ And a little bit of hiney aroma... "The harmony of fresh fermentation gas and flavor is very popular. The harmony of fresh fermentation gas and umami is very popular". I was a bit disappointed in this one 😓.

A bottle given to me by my predecessor, who recently reached retirement age. He said it was a thank-you for the 3 kg of new rice he delivered every year during his tenure, which he called a "taste test. Rice has become sake! The nose has a fruity ginjo aroma, but the fragrance is subdued. The mouthfeel has a gentle, round sweetness and a satisfying umami. The fruity feeling that passes through the nose and the mild acid bitterness that comes at the end disappear slowly and gently. I had an image that Houyo was not my favorite, but this is good! I can say that when it comes to high-class wines, this one is genuinely tasty. Thank you very much for the sake!

It is said to be the oldest brewery in Miyagi Prefecture. Fresh and mellow. The acidity is strong. I wonder if it is better to let it sit for a while after opening it. As expected, sweetness appeared on the 3rd day. I wonder if Houyou tastes better on the third day 🤔.
