First time drinking outside in a while, and the second drink was ayu - ‼️ This was also the first time I had this. The aroma is gorgeous and the sweetness and acidity are well balanced. I thought that ayu (sweetfish) was the ultimate in dryness, but it was easy to drink and I liked it.

Okushika, Fire-brewed, unpasteurized sake (Jiketa Yamada-Nishiki) Rating 4.4 100% Yamadanishiki from our own rice fields, 17% alcohol by volume, 60% polished rice An aged pure rice sake brewed using only "Yamada-Nishiki" grown organically and without pesticides in Akushika Shuzo's own rice paddies. This "Okushika" is carefully aged in the brewery in its unfiltered, unfiltered state, and then released when it is ready to drink. This sake has a full-bodied flavor with a subtle expression of clean acidity, and goes well with Japanese cuisine. This is an apparently hard-to-find Akizuka sake. Since I had already had a draft of this sake before, I had to unlock the results of a terribly maniacal drinking comparison. I chilled it. It has a sweet aroma that harmonizes graininess and a sense of maturity. The modest mouthfeel reveals the clean acidity and caramel flavors typical of the sake's origins, and the full-bodied sweetness and rich umami slowly permeate the taste buds. It is delicious both lukewarm and hot.

The balance shines through. The impression is that sweetness, sourness, umami, and bitterness come together just right. It's lightly sipped, and it's good for sipping sake. I could drink this drink on its own for a long time! When it's freshly opened and cold, it has a watery, clear taste. It also has a slight spicy taste. I often think recently that the way you feel it changes depending on the temperature range is one of the interesting and difficult aspects of sake. Compared to the same junmai ginjo sake (Ryosuka), the acidity is more subdued and the taste is more pronounced. On the third day after opening it, I felt the flavors opened up and the gentle sweetness and umami reached its peak! It's very tasty.
