［Fukui Spring New Sake Festival (6) Next, visitors can enjoy a glass of sake from their own local brewery. Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. I think if I recommend [salted sea urchin] to people outside of the prefecture, they will be puzzled how to eat it 🤔.

This month we had a lot of drinking outside, so it's been a while since I've had a drink at home! I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! Although it is a summer sake, it is a perfect bottle for long nights in autumn. I felt it has the potential to be as good as many dishes in the autumn season of taste.

(Sequel) Six people drinking together, no matter how much sake you have, it's never enough (lol), so we rushed to a store selling Kochi sake in the basement of the antenna store to consult with the owner. The friendly owner suggested this one when I told him my budget and preferences. It has a beautiful, cool label, and the taste is light, yet refreshing. Of course, it is perfect for Kochi cuisine👍.

I had never seen this brand before, so I couldn't resist buying it. This is a sake brewery in Shunan City, Yamaguchi. There are about 1,400 sake breweries in Japan, so it's no wonder that there are breweries and brands that I don't know (there are more than 1,000 here). Even if I were to drink one brand every day for the rest of my life, it would take me almost 30 years (^_^;) It's simply impossible. This was an aside. The moment you put it in your mouth, the aroma is distinctive. I wonder what it is, is it the aroma of rice? In total, the aroma is fluffy, the taste is tangy, and the sweetness is warm. I think it's delicious.

☀️ Masamune hunters go today🍶. Today we visited the Tottori & Okayama Antenna Shops, a place of relaxation for Masamune hunters 📡. As soon as I arrived there, I started looking for Masamune and found it 🤩. It's sake 🍶. It has a crisp, Hakka-like aroma. It is also very refreshing on the throat. The umami of the rice is subdued, and then there is a subdued sweetness and an equally subdued acidity. Overall, it has a light and simple taste 😙. It is probably best suited as a food sake 🍶. The Hakka flavor, combined with the oiliness of the food, seems to help the oil from the food to be washed away quickly 😁. Nice Masamune👍

The 800 check-in is the H27BY (2015 brewing year) Sanko Masamune from which Toji Takagaki retired 😆. We were lucky to get it 😊. This is the only sake from Mr. Takagaki but we are holding Takagaki festival 😅🍶. When opened in the fridge, it smells slightly like a soy sauce warehouse (there was a soy sauce warehouse in my neighborhood when I was a kid) or Shaoxing sake. It's a dry and light sake when cold. Sanko is still a warmed sake, so I'd recommend heating it up 🍶. The top aroma is the aromatic aroma of a freshly heated sake. When heated, it does not have a matured aroma. In the mouth, you first feel sharp acidity and spiciness. The acidity is not as strong as that of Sanko Tenpyo's Namahashi or Yamahai, but it is quite good. There is a slight sweetness and a beautiful umami that does not make you feel the rice polishing ratio of 72%. This is a perfect food sake 🍶😊. I don't know if this is the original taste since it is an old sake, but it was deeply delicious 😌. After retiring, he returned to farm near his hometown, but unfortunately, he died in a field accident last year 🥲. I learned of his death when I saw a relative of his on Instagram late last May with a picture of H27BY "Katsumasa" to inform me of his passing. A toast to Mr. Katsumasa Takagaki 😌🍶. The fourth picture is a sake from the brewery where Mr. Takagaki worked in the past.

The aroma is gorgeous and pear-like 😊The rounded mouthfeel, overall mild acidity and umami 😄Great crispness that disappears quickly 😘I felt it was an easy sake to pair with a meal 🥳. Souvenirs of Iwaki I didn't know there was a sake brewery in Iwaki city😇And some delicious shiso maki (shiso rolls) ‼️ Shiso rolls are usually wrapped in miso, but this one is wrapped in takuan (pickled radish). The aroma is a typical one-cup one. The aroma of the bottle is a bit tangy 🫙. When you drink it, the stimulation to the throat is tsuyomi. The mouthfeel is not sticky and easy to drink though, The sweetness is heavy on the back of the tongue. The alcohol taste, bitterness, and a mysterious stimulation hits the throat as if to drown it out. I don't know how much it costs, but I think it is good for one cup! This shiso maki is so good 🤤. When you combine this with one cup of shiso maki, the stimulation to the throat is lessened and the sweetness is emphasized. The spiciness of the shiso roll neutralizes the sweetness. This is a pairing full of the feeling of a popular izakaya (Japanese-style pub) 🤣. I'm an uncle who is happy with this pairing 😭

This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. The first impression you get when you drink it is a refreshing, fresh and gentle sweetness that only sake can provide.
