profile iconSake purchased in Nara, GW. This is my first time to buy sake from Nakatani Sake Brewery. It seems that they have a factory in China and also produce Chinese sake using Chinese rice. It has a mild sweetness with a slight yogurt-like nuance. There is also a good amount of acidity. Yamanokami yeast is a type of sasayuri. I've had Yamanokami yeast sake in the past, but I didn't know it was a flower yeast. I heard that there used to be a raw version of this sake, but I am sure it is delicious. It seems that this sake is also limited in stock. There was only one bottle left at the store where I bought it. I heard that they moved the brewery that was closed at the Corona Disaster to the center of town and started a brewery where you can experience brewing. I wonder if that's why they are discontinuing all of their existing products.

profile iconThis is a Junmai sake, a full-flavored sake among the sake we received. It was a cold day, so I started it at room temperature. It is crisp and dry on the palate, with a hint of sweetness from the rice for a moment, but it also goes down the throat well, making it a dry Niigata sake. It is a bottle, so tomorrow I will warm it up a bit and drink it.

profile iconThis is a bottle given to me by a relative. I have been saving it to drink when the temperature drops a little. It is a typical Niigata sake, with a gorgeous aroma that wafts into the nose and a sharp taste down the throat. The package was white and gentle. Thank you very much for the sake.

profile icon@sakebar Fukuzo This is the last sake I drank at Fukuzo 🍶. For those of you who think "how much have you had to drink? I think so too😅. The first aroma is sweet with classic acidity. It has a full-bodied sweet flavor with a hint of acidity on the palate. It's also a great costumed honjozo that doesn't make you feel like it's been soaked in alcohol 😋. It was delicious 🍶✨. Thank you for everything, landlady 🙇🙇🙇.

profile iconAs the bottle says, it has a "traditional flavor," but in other words, this standard flavor is good. It has a strong flavor and is crisp and dry. It's enough. If you want to relax, we recommend heating the sake to a milder flavor.

profile iconSince I came to Fukuoka, I wanted to try a sake that I couldn't drink in Tokyo, so I decided to try Hiyotsuru for the first time. The first aroma is sweet with a hint of acidity. In the mouth, there is a slight astringent taste with a strong sweetness that is typical of unfiltered raw sake. The astringent taste lingers and gradually fades away. It was quite delicious 🍶✨. The second one is at the Hiyotsuru brewery. Of course I went there after drinking it the day before 😅. There was no sales or tasting, so I just looked at it and that was it. It looked like some brewers were working on bottling.

profile iconWe went on a bullet trip to a hot spring in Gunma 😆♨️ Before arriving at the ryokan, we went to a local liquor store. I decided to buy some Gunma sake at a local liquor store before we arrived at the ryokan! I was so excited, I visited Takahashi Yo Shoten for the first time, which I sometimes order from Corona Disaster! I visited Takahashi Yoh Shoten for the first time! I found a bottle of sake that I had ordered before and was very impressed. The Gan brewed by Mikito Takai, who is no longer with the company, was really delicious, so I chose the New Gan with the feeling that I would like to try it too. I was surprised to find that it was brewed by Mikito Takai! And it's still delicious 😭✨ It was great slightly chilled, but also great warmed 👍. Not spectacular, but deeply delicious... And it's so cosy! I brought home the rest of the bottle. I'm going to drink it with care 🍶🎶.

profile icon[Fukui Spring New Sake Festival (6) Next, visitors can enjoy a glass of sake from their own local brewery. Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. I think if I recommend [salted sea urchin] to people outside of the prefecture, they will be puzzled how to eat it 🤔.

profile iconIt is recommended to be warmed up from room temperature, so I warmed it up a little and drank it. It was easy to drink, with a strong sense of umami and a quick kick. Overall, it has a soft flavor that goes well with cold winter meals.

profile iconSake in Sabae, Fukui Prefecture. Sabae, the city of glasses. I lived there for about three years. The name "Kashon" was taken from the flickering flame of a candle at a wedding celebration. It was named in honor of the Emperor Taisho's marriage. First of all, it has a strong sweetness that is honestly rice-like, and when you poke at this sweetness with your tongue, a pungent taste emerges. There is also a slight hineyoshi aroma and a slightly astringent and hard taste like sake lees. It tastes like a country sake (I like that kind of sake) that has been drunk for hundreds of years. How about if you heat it up? The taste loosens up a lot, and the sweetness and spiciness swell up at the same time. The hineyoshi and the hardness of the sake lees are softened, and the strong sweetness does not hit you, but becomes a whole with the spiciness. It becomes softer and much easier to drink. It is not too tiring to drink, and can be easily matched with anything. It can be used for any occasion, from an everyday evening drink to a sake to be shared with others at a candlelit banquet. The same brewery also has a brand of sake called "Echizen Kokufu," which is located in Echizen City (formerly Takefu City), a town next to Sabae, where Murasaki Shikibu lived for about a year away from Kyoto. Coincidentally, Murasaki Shikibu is the main character in next year's Taiga "To the Luminous Kimi. I wonder if the events in Echizen-kokubu will also be depicted in the film.

profile iconThe name is after the Kirin Castle built in Tsugawa, Aga Town, where the brewery is located. Why are there two phoenixes drawn on the kirin? It has a floral, floral aroma, and is it dry? It is a mellow sake with a sweetness that is in harmony with the sweetness, and has a delicious flavor that makes you want to drink it. This is the 500,000,000 7th bottle of the one-cup, one-pack festival.
