I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region. They have a wide selection of sake brands such as Rairaku, Kinshi Morinori, Shonosato, Hizen Kurashin, Chitose Mori, Kikunoi, Hakuryu (Fukui Prefecture), Ayagiku, Hanashimi, Zoka, Morinokura, Rokkasen, Tenzan, etc. Sake made with Sanuki olive yeast. Fresh, rich, sweet and acidic. The acidity is impressive, but there is also a bit of spiciness in the latter half. It has a light mouthfeel for its alcohol content, perhaps due to the acidity. It does have a slightly tropical flavor.

Corner shop at the mysterious cheese shop (2) Since the corner drinking at this restaurant is self-serve, we discovered an unopened bottle of Moridori when searching the refrigerator! I entrusted it to Mr. Nemuchi, a professional corker 😁. I drank a lot of dry sake at an off-line meeting the other day and I'm in the mode that I can drink some dry sake, right? I'm in a mode that some things are dry, so I drank it. It's definitely dry, but it's delicious with a nice sweetness and gasiness 😁.

Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. Today is my day off, so I took a walk around Sunpu Castle, Kunouzan Toshogu Shrine, and Nihon Taira! I've always wanted to visit Kunouzan and Nihondaira, but the view of the Pacific Ocean and Mt. Fuji from Nihondaira is fantastic👍. On the way home, I took a sip. When I opened the bottle, it had a melon-like aroma. The mouthfeel is refreshing, but the melon-like sweet and astringent taste comes through in a jiffy, giving it a gorgeous flavor. However, the assertion itself gradually settles down and changes to a spiciness, so it is not too heavy for a nama-zake and is easy to drink! Tomorrow is the second half of Shizuoka life. I'll do my best!

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

I visited Araiya Brewery for an in-store tasting of Sekiya Brewery's sake, which I couldn't taste because I had to drive afterwards 😅. Sake that has been aged for only one year and bottled. I tried to hold off on opening it until New Year's, but my fridge was at capacity 🤣🤣 so I opened it 😅. Well, the aroma is green apple 🍏, soft mouthfeel, fresh sweetness and delicious flavor with a sourness that slowly builds up ✨. On the second day, I think the sweetness has deepened. I've read that it's recommended to cool it down a little bit, so if you let it sit for a while after pouring it, the sweetness and umami will deepen and become more intense ✨.
