It's the holiday season, so I got this cup of sake 😚🍶😚🍶♪ Kapan⭐︎ and open it up, yeah, it smells great☺️💕! It's very smooth on the palate, and then suddenly it comes with a cue. I found a sake tasting place near Yamagata Station. I didn't know such a place existed. I found one in Niigata before. I wonder if there is one in each prefecture. The taste is light, dry, and refreshing. The aftertaste is short and sharp. You can also taste the umami of the rice.

Junmai Ginjo 🍶 Henohenomoheji 😅 All of it is made from Yamada Nishiki 🌾 without agricultural chemicals in its own fields. Fairly yellow, strong acidity, matured. Daruma Masamune-like. It's a bit like Daruma Masamune. Surprisingly young freshness as you drink it ✨ matched with grilled wagyu beef ichibo 🐂👍 Umi and @Takadanobaba 20230516

I've always wanted to try a henohenomoheji. I found it at an izakaya I usually go to, so I tried it 💪. Grain aroma. The taste is quite robust with a gentle sweetness. The back end is astringent? It's good with a sharp finish 😋. I would like to drink it at various temperatures, but since it is an izakaya, I can't go that far 😇. I had it with Ara sashimi and it's great ‼️ I've never had ara before, but the meat is quite firm and filling 🐟. I have a faint memory of ara being in a delicious book 🤣.

This Sake has a full mouth feel and some sweetness at the beginning. The flavor of this Sake is bigger than other Seitoku Sake but it still has good balance. Very good with big flavor foods like mapo tofu.

This Sake has an initial sweetness and a full mouth feel. There is a hint of cedar as the alcohol clears my pallet. Very good with big flavor foods like yakiniku. Seitoku has many Sake that I enjoy.

This Sake is light, refreshing and easy to drink. I am revisiting this Sake because it has been a while since I last drank it. I enjoy the mild flavors of apple and melon with a clean, short aftertaste. This is a refreshing and well balanced Sake.

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

Izakaya a short walk west of Fukuma Station Sake from Shikoku seems unusual and I end up ordering it I drink it cold. Clear and colorless It has a full flavor in the mouth. The flavor spreads slowly. Slightly woody nuance when served with sashimi. It is good to drink with snacks or to enjoy the sake itself. The name is impressive, and although it does not have the sharpness of the flavor of a single sword, I like it very much.
