津島屋シン マクアケ純米吟醸生酒

Miyama Nishiki (variety of rice) The aroma is less assertive, but the richness from the attack to the aftertaste is amazing. ...... Like the richness of almonds, different from the juku. Somehow, it is white. It seems to go well with sesame.

High clearness The aroma is like a ripe green apple with a crisp acidity. The attack is sweet and gentle, but it tastes like an elegant grandmother from the sharp sake sensation(?). I praise it. Mixture The paper-like aroma peculiar to Origarami, or the aroma of a bookstore is included. The sweetness is reduced while the strength of the sake sense is softened. An elegant old lady is reading a book. The manager said it tastes like ramune. It's interesting to hear other people's opinions.

It has a strong aroma of acidity, a citrus aroma similar to lemon or sudachi, and a slight sense of dashi. The attack is crisp and tangy, but gradually the flavor and sweetness of the rice spreads, and the aftertaste is sweet and rich. ...... White fish sashimi with a squeeze of sudachi would go well with it. Postscript When I paired it with gingko nuts, the sweetness of the aftertaste matched each other very well. It's so good!

The aroma is of mature and tight acidity with just a hint of nuts. In the mouth, the taste of nuts, potatoes, and a hint of sweetness rolls down the tongue, and the aftertaste is delicious!

AKABUF NEWBORN純米吟醸生酒

It has a sweet scent of pure white flowers like lilies. It's a rare type that tastes just like it smells. It's delicious. It spreads sweetly and disappears quickly. I'm sure it will swell up more when it sits. It may go well with venison as well. It seems to have a gentle taste, but it has a solid core.

The aroma of ripe green apples. A gentle and soft sweetness surrounds the tongue, followed by a sharp and clear brightness, which is combined with a delicious taste.

As it is a flower yeast, the aroma and taste are gorgeous and beautiful. It has the brightness of a noble queen. It has a refreshing and gorgeous image rather than sweetness. There is a deliciousness behind it.

The aroma when I held the glass close to me was the best, it was like sniffing a flower! In the mouth, there was a clarity that was more like a sharpness than a gorgeousness.

It tasted soft, sweet, and full of flavor, as if it were unpasteurized sake that had been opened for a long time.

Dry taste Dewhafu Full flavor of mellow cheese. It's still dry, so the aftertaste is short, but it's more gentle than crisp.

Undiluted, 13% alcohol. ......! Aroma of lactic acid, typical of Yamahai. The sensation on the tongue is not stimulating, and the sweetness and umami come in easily. The aftertaste is short. It's amazingly delicious! However, it is difficult to pair because it has no unbalanced characteristics. It would go well with something with a strong flavor and something loose. Tea would be good.

From left. Kenkunichi 70% Sharaku 50% Izumofuji 60% 3 kinds of Omachi from Akaban, Okayama Prefecture to compare! Ken-Kun-Ichi -> A crisp and clean taste, just like Ken-Kun-Ichi. I'd love to pair it with nukazuke! Sharaku→ Milky aroma and enveloping sweetness. A gentle daiginjo with a long aftertaste! Izumofuji→ Refreshing aroma with a hint of lactic acidity and a short finish

I've had the horrible luxury of ...... The Yamada 60 (left) has a nutty (and almondy, a bit deep) bitterness and a complex swelling. Hachitanishiki 50 (right) is nutty (without bitterness, like cashew or macadamia), with a hint of dried bonito flakes. Perhaps because it is 50, it has a fruity sweetness and a slight astringency. I think it can be beaten by seared meat. It goes well with seared black Japanese beef.

The aroma of rice with a hint of bitter sweetness. Miso with a hint of koji goes well with it.

Lactic acidity, aged aroma typical of hiyaoroshi, the aroma is not betrayed in the mouth. It's like licking a fruit-flavored candy. If you combine it with raw oysters with homemade ponzu, it is already too sensual ....... The aftertaste tasted like persimmon, and I was like, "Pun ......? I'm sorry.

From the moment I opened the lid, I was convinced that it was the aroma of my favorite sake. ...... When I tipped the glass, I felt the fullness of the rice flavor and the sweetness of the taste. ...... I love it! If the temperature rises, the sweetness disappears, so it is best to drink it at a cool temperature. I paired it with shrimp cream croquette, and the cream was good, but the shrimp was a little different. I want to find a pairing that goes well with this! I'll do my best!

It's an unpasteurized sake, but it has a round sweetness and an aftertaste that isn't too sharp or dull. ...... I laughed at how well it goes with crab miso.

The aroma of lactic acid~! In the mouth, the taste is more mature than the aroma. It slides in smoothly and leaves a trace on the tip of the tongue.
