On the palate, one senses refreshing acidity and umami, and it finishes with a touch of bitterness.
The snack is iburi gakko (pickled ginger) and chestnut okowa. The sense of maturity of hiyaoroshi goes well with the smokiness of the iburigakko. I also feel that chestnuts go well with the yellow label of this sake.
