Okinawa at last!
I got this hard-to-find sake at a souvenir shop like a roadside station during my family's trip to Okinawa last fall. I finally had a chance to drink it. It was served with pork spare ribs, not agu pork as is typical in Okinawa.
The taste...maybe I was expecting a little too much, or maybe it was a problem with the storage conditions in our house, but it tasted a little like brewer's sake. The sweetness is nice and elegant, but I don't like this sake smell.
I will have to go through it to conquer Okinawa, but I don't think I'll try it again. Awamori is better...
The wine I chose for my Tokyo conquest is a very different version of Tokyo Minato Sake Brewery's palla casey.
It can only be described as a rice wine. It has the freshness and fruitiness of wine while retaining the rice flavor that makes sake sake what it is. But rice is rice, not fruit. The depth is a little shallow. Compared to the alcohol content, this sake is easy to drink.
It is quite spicy.
Not too heavy. It's clean but full-bodied. Does that mean it has no sweetness? It is an excellent sake for a meal without interfering with the meal. It goes well with rich toro.

It sure is tasty! Well-balanced, not cloying sweetness and richness, with just the right amount of sake. My wife says it's light. I say it is quite strong. It is a difficult sake to make, but the fact that it is so easy to drink is what makes Tobiroki Tobiroki.
Compared to the famous local sake we bought together, it is not outstandingly good, but it is one of the best. It is not outstanding.

It certainly has the flamboyance of Shinsei, but with a masculine roughness. That is what is called "sake-like". It is delicious. It is gorgeous, but has a depth that makes it a good food sake. Today I drank it with a slightly strong Chinese drink, but it did not lose. In fact, it pushed back. In that sense, I feel like a man. I thought that stereotypes like "man" and "woman" are not liked... but that's my impression. It was a bottle that made me think that there must be a lot of good sake in the northern Kanto area.
This muddy sake was the last of the sake from Akita. As this was an active sake, it was strictly forbidden to overturn the bottle and to open it after stirring. It didn't blow at all. However, there was a good amount of bubbling.
The name of the wine is said to mean "rustic," but it's not so bad. It has a sophisticated taste. When stirred, it had an overwhelming sense of rice. Sweetness of rice and rice. But the sweetness was not that much. The alcohol content of 17 degrees is not bad, but it's a good one.
It goes well with meat dishes and other dishes. For the price, it's a sake that I would be happy to drink again!
