Sawara-bayashi Shiboritate Nama-zake 65% 14-15% 720ml 1320yen My wife's father bought this sake for us. We all enjoyed the sake together while being treated to dinner. The freshness of the sake is not so strong, but it is light and easy to drink. It is suitable for a mealtime drink and just right for a chat. The brewery is quite a maniac among Chiba breweries. Suginamiki: Roadside Station Nishikata Limited Junmai Ginjo Unfiltered Nama Sake 17-18%. Purchased at Michi-no-Eki Nishikata on the way back from a round of golf in Tochigi. Michi-no-Eki Nishikata carries a large selection of sake from Iinuma Meikozo, the brewer of "Sagata". And they also have draft sake. Nowadays, "SAGATA" can be found at famous sake shops, but "SUGINAMIKI" is distributed locally. It has a pineapple-like fruitiness and is very rich. The caramelized taste is a characteristic of Iinuma Meizo's nama-shu. It has a long aftertaste. However, it does not go well with raw food such as sashimi, so be careful. Gunma Izumi Ginjo Tamaroku 50% 15-16% brewing alcohol 720ml 1460yen The name "Awamori" means "light green" in Japanese. It is made with Gunma Wakamizu and made with Yamahai. It is light and dry and quite to my liking. The Gunma Izumi is very good when heated. The koji taste is fuller and juicier. This is the kind of sake that I like to drink slowly, slowly, slowly. When the sake boom of Shinmasa and Ottersai started, an earnest-looking but slow-talking shopkeeper opened a store in the drinking district of Nakanobu Ebara, but he didn't stock trendy sake and sold only very reluctant sake like Gunma Izumi. The label is well made, but the taste is below the price. The dry taste is understandable, but the bitterness and other flavors are quite persistent. It smells like sake. No depth. It's a bit harsh even for a cheap sake. So it became a cooking sake. I thought it was no good to think that even cheap sake is better in bottles than in paper cartons. BUFUKU Junmai Ginjo cold stored for 3 years 50% 15.5 degrees Celsius The finish has a very matured feel. It is quite stinky, and is a favorite of professionals. Made with 20% Tamakae and 80% Nipponharu. Dry +3, but you can't tell much because it's so sticky. It is more than the alcohol content. It has cocoa and shochu-like taste. They say it used to be unintentionally made to be a bit bitter, but they have evolved it by using low-temperature technology. It seems to be a little bit twisted, though. Some of the other specs of "Bifuku" are delicious, but I wonder if this cold storage is the right one. There is also a cold-stored draft sake, but I'm curious about the taste of that one. Take-no-en Goen Kimoto Junmoto Nama-shu Yumeshizuku from Kashima terraced rice paddies 75% 15%, 720ml, 1496 yen I remember that I bought this at a small liquor store in Shinagawa Togoshiginza. It is a draft sake, but it is juicy with little gas and acidity. Lactic acidity can also be felt. The website describes it as melon-like, and it is. The astringency is a bit strong. Kiku-Masamune Sesession 12-13% brewing alcohol 900ml 810yen Thick, plum-like fruitiness and super mellow sweetness. White malted rice, brewing acidity like wine yeast, but this is CRU2 yeast, Kikumasamune's proprietary yeast. It's like a cheap sake coated with umami ingredients? I will have to give this to my friends at Kinsho-kai. I served it blind to the four fierce drinkers. Three of them said, "This is good! It's a good sake! This is the latest fad, isn't it?" They were fooled, but "Sake Hitman" Mr. F said, "Hmmm? Something doesn't feel right," he said, his eyes shining. Hitman and I gave it a slightly lower rating, but the others gave it a higher score, so it was ranked 4th out of 15. It easily ranked high among the famous sake brands. Koshi Junmai A small bottle of Koshi was purchased at a supermarket in Chiba. Most sake bottles like this are not very promising, but Koshi was different. It was tangy and dry with a hint of acidity. Getsu-chu-ten Junmai Namaishu Summer Sake 15-16% 70% Sanuki Yomai 1800ml 3110 yen This is a bottle of Nishino Kinryo's Gasshuten. I really like this sake. The acidity is juicy with a cucumbery feel. It has a deep taste. It has a tangy and spicy flavor, so it is not just a sweet sake. It is a summer sake, so maybe they are trying to make it dry. Eikofuji Morinokuma-san Junmai Daiginjo Unfiltered Nama-shu 50% 16.6 degrees 720ml 2090yen I bought this thinking that Eiko-Fuji was producing strange labels again. It is a sake to support the reconstruction of Kumamoto Castle. It uses Kumamoto's rice "Morinokuma-san". It is said to be made from rice. It has a juicy flavor unique to Eiko-chan. The orthodox No. 9 yeast is said to be a perfect match for Miyamanishiki. Polishing rice is daiginjo standard. The flavor, sharpness, drinkability, and cost performance are all in the ballpark. Nara-no-awa Rice Sparkling 5 degrees Sugar Acidifier Carbonic acid Gas 200ml 429 yen We bought this sparkling sake from Nara Toyosawa Shuzo. It is a cider-like drink. It contains sugar, acidifiers, and injected gas. The 2019 "Let's Toast with Sake from the Ancient Capital Executive Committee" is a project. Since I changed my car, I went to the brewery to buy some sake. It tastes like an average sake. It may be orthodox. Fresh and crisp. It also has a freshness like grapefruit and lemon. It has a slightly fruity taste with a sharp and astringent aftertaste. It is a special honjozo because it is aluzo-sweetened. The "Yorimotsuru" for the local market is also of interest. Katori 90 Nama Hashiroshi 2021 Katori" is my favorite sake these days. I bought Katori 80 at an organic store in Sangenjaya and became addicted to it, so I bought Katori 90. 90 means polished, of course. It is also a "sake" with a slightly matured taste. It has a vinegar-like acidity and a mild fruity acidity, and has a refined flavor without the smell of aging. Sagata Harumi-Sugata Junmai-Ginjo Unfiltered Nama-Shu, Comet 55%, 16.8°, 720ml, 1650 yen It is bitter and a little sweet with a sake degree of -2. This bitterness is a characteristic of "Sugata". The fruity acidity is good. Comet is a rice produced in Hokkaido, but it can easily be made into a refreshing sake. It is easy to make a light sake from a rich, full-bodied sake.
