ChokkiShichibonjari Junmai 80% Polished Rice Nama Shu 80% 16% 720ml 1705yen This sake brewery from Shiga Prefecture has been focusing on low-polished rice since 2004. The freshness and acidity are outstanding. This is the original taste of grains. It seems to be a sample of a low-polishing sake. It is also spicy and has a nice aftertaste. Chokki木戸泉 非売品 15% 500ml  醸造アルコール モノトーンなラベルに「Not for SALE」の文字。これは木戸泉酒造に行った時にもらったもの。タダなのだ。もちろん数種の酒購入して。タイミングも良かったのかもしれない。 開栓してグラスに注ぐとだいぶ色が付いてる。熟成のオイニーが分かる。 ミリンと果実が上手く合わさった味。 ウイスキーのようなスモーキーさがこれまたいい。 多分ブレンド酒なんだと思うけどこんな美味いのタダでもらえるなんてほんと嬉しい。旅の思い出になりました。 評価4.3(5.0満点中) 20230313

ChokkiKatori 2021 Junmai Namaishio 80% 15% 720ml 1309 yen Purchased at a select organic store in Sancha. Made with pesticide-free rice. The sticker on the label says "Nironi" and I wondered what it was, but it turned out to be NINO-NY (2021). The color is quite amber. It has a spiciness on the tongue and an acidity that reminds one of vinegar. And it has a nice aged taste. This is amazing. The warmed sake gives it more of a "sake yeast" feel. The rice seems to be a blend of various varieties, including an unfamiliar one called "Yukikawake. I confirmed that it can be purchased on Amazon.com, and I think it will be one of the top sakes I drank in 2023. Rating 4.4 (out of 5.0) 20230310

ChokkiTokaimori Yosaburo Junmai Super Dry 65% 15% 720ml 1320yen My wife's father bought this sake at the brewery. I'm going to choose this one! It is labeled with a handsome thief wearing a tenugui (hand towel). However, it is good for eating. It is dry and dry, with a sharp taste. A man's sake. The rice is from Chiba Prefecture. I think I bought it at Big Yosan, a supermarket in Kanagawa Prefecture. The rice is Yamadanishiki from Hiroshima. It has a herbal bitterness and a certain level of spiciness. The astringency has a touch of sake yeast. The brewer's yeast is a delight. It has a clean impression without any smell from aging. It is said that this brewery produces a lot of Yamada 70. ChokkiIwaki Kotobuki Junmai-shu - Tairyo Celebration Yamabuki 15% 65% 720ml 1580yen Koshihikari rice produced in Namie Town. They use a method called "Shin Gin Seibai" (not Ginjo-shu) which does not remove too much of the necessary ingredients. It has a slightly golden color and a full flavor. I quite like it. I had drunk the Junmai (12% alcohol by volume) from the Nagai brewery before and wondered what it was all about. I was surprised to find out what it was, so this time I was able to reevaluate it. ChokkiNakamuraya Junmai Ginjyo Nama-nama Sake Shiboritate Koji 55%, Kake 60%, 16%, 720ml, 1760 yen There is almost no gasiness, and the strong ginjo yeast accentuates the umami. The aftertaste is quite sweet. The ginjo aroma is a little off-putting, but is it Kanazawa yeast? ChokkiKaganoi Daiginjo 45 15% 45% Takananishiki, brewing alcohol 720ml 2200yen Kaganoi Daiginjo, a sake from Itoigawa, Niigata. It uses medium-hard water, which is rare in Niigata. The hardness of the sake quality is not very apparent. It is full-bodied and mellow, with a strong ginjo character. It has a richness for a Niigata sake. It has umami and sharpness. The brewery burned down in 2016 and has been rebuilt, but the Noto earthquake has had almost no impact on the brewery. Rating 3.7 (out of 5.0) 20230219

ChokkiTengumai Junmai Junmai Sake Yamahai brewing 16% 60% 720ml 1650yen A representative brand of Ishikawa Prefecture. It is one of my favorite sake. Gorin of this brewery is also good. It is full of the characteristics of Yamahai brewing, and has a rich, full-bodied flavor. The color is slightly bright with a hint of bright golden yellow. I am glad I bought a bottle. It seems that the recent earthquake had some impact on the brewery. Although the brewery was not destroyed by the earthquake, the brewers' homes were damaged and the brewing schedule was delayed significantly. Rating 4.2 (out of 5.0) 20230215

ChokkiGen Dry 180ml Gen by Wakatsuru Shuzo. The details are not clear. It may be a souvenir sake. The concept is to make a dry sake that you never get tired of drinking. It is said to have a cool design suitable for dry sake. It is probably a regular sake. Even the standard sake seems to be made from Toyama Gohyakumangoku. It tastes as easy to drink as it looks. It is hard to guess the name "Wakatsuru," but it is the same company as Naekaya. Toyama Prefecture must have been shaken by the earthquake. Rating 3.7 20230211

ChokkiShimantugawa Junmai Ginjo-shu, Tosa Tanrei brewing, 14-15%, 60%, 720ml, 1100 yen My father bought this at the Co-op. The light blue bottle gives the impression of a clean taste. It is light and dry, classic and easy to drink even for the elderly. Personally, I prefer it slightly chilled. The rice used is Yamada. I wonder how they can make such a low-priced Yamada, even if it is a special grade A rice or produced in a different region, or mass-produced. This is 1,100 yen! ChokkiRyoseki Uraginmon 16% 60% 720ml 1098yen This sake was given to us by a friend in Akita. The label has a luxurious feel, but the price is unbelievable. Assemblage is a blend of sake. It is a blend of sweet, spicy, bitter, acidic, and various other flavors without fighting. The sake rice is Gin-san, Chihomori, and Yume-obako. ChokkiKaze no Mori, Rohafu 507 Junmai, unfiltered, unpasteurized, 50% 16%, 720ml, 1799 yen I dropped by Yajima Sake Shop in Chiba and bought Kaze no Mori. It is a Junmai Daiginjo in terms of specifications. It has a strong fruitiness and sweetness. I prefer the dry Akitsuho because it is a little too sweet. ChokkiMatsu Midori Ryo Junmai Ginjo-shu Nama-shu, 55% with Kawazu-zakura yeast, 15-16%. The bottle was opened in January 2023, having been produced in February 2022. It has a refreshing gas. The sweetness and acidity are in perfect balance. The fact that it has been laid down for a while gives it a sense of maturity. I like basically dry sake, but this Ryo is good for sweet sake. I want to drink this sake every year. It is made with young water produced in Ashigara, Kanagawa Prefecture. Kinuhikari is also quite good. Rating 4.3 (out of 5.0 perfect) 20230123

ChokkiKIZURA Special Junmai Ginjo 16% 60% Yamadanishiki 50% Omachi 50% 720ml 1250yen This is a gift with a simple label of KIZAKURA. It had been lying in the back of the shelf. I didn't know that Yamada Omachi was priced at 1,250 yen. Gentle sweetness and gentle spiciness. It is best served at room temperature or warmed. Don't be fooled into thinking it's an old-fashioned sake. No wonder the elderly have so much confidence in this cheap sake from a major brewer. Rating 3.8 (out of 5.0) 20230114

Ryozeki初しぼり純米原酒生酒

ChokkiRyoseki Hatsushibori-Junmai Nama-no-Nama-Shu 16% 59% 720ml 1540yen This sake arrived at the beginning of the year from Akita. He asked me, "What kind of Akita sake would you like to drink? I answered "Ryoseki" without hesitation! I answered "Ryoseki" without hesitation. Ryoseki has been a representative brand in Akita for a long time, but nowadays "Hanayuup" brewed by the same brewery is more well-known. I knew I had to know more about Ryoseki, so I asked for it. A few days later, I received the bottle and immediately opened it. It was fresh, as if it was the first time it had been pressed. It has a little bit of the strength of the original sake, with a strong sweetness and umami. The sake is +3 (or 4.1, depending on the year), which means that the sake is dry, but the sweetness is not as strong as it should be. It is a little different from the Ryozeki of the past. It seems to have evolved with the times and with the trends. The sake is made from Akita rice called "Yume-obako. I don't think I've ever had it before. Personally, I would have preferred it to be a little less assertive. However, I am thankful to the owner for sending me Ryoseki, which is not easy to drink in Tokyo. ChokkiKidoizumi PURE GREEN 2021 R3BY Yamadanishiki Nama-nihonjunshu Junmai 60% 16 1650 yen per 720ml New Year's Day in 2023 was right around the time I had my first corona. Since I had never been vaccinated against corona, I decided to drink Kidoizumi thinking that sake was the vaccine. It is made from high-temperature Yamahai sake. It seems to be effective for a weak body. I heard that an old man once said that Yamahai is good at the beginning of a cold. Yamadanishiki produced in Chiba Prefecture may be rare. The acidity and umami spread, and it is thick and juicy. It is easy to drink as it has a slightly low alcohol content for a pure sake. As expected, I caught a cold for a round after this.
