60% polished "Tamakae" rice produced in Yamanashi Prefecture. It won the gold medal in the heated sake contest and is recommended to be served at room temperature to warmed. The aroma is gentle but sparkling, elegant and sweet like Japanese sweets. We also detected a hint of "azuki" flavor, which is not too sweet. In the mouth, the fine sweetness of Wasanbon with a slight viscosity and a hint of lactic acidity. There was also a slight banana feeling. As it was swallowed, the sweetness subsided and the acidity spread, and bitterness gradually appeared, bringing the whole thing together and bringing it to a sharp finish. The lingering taste is pleasantly sweet and pungent acidity, followed by a citrus sensation covered with syrup. It is delicious!

5,000,000 rice is used. Slightly yellowish in color. The aroma is heavy and richly sweet. Chestnuts in syrup and sweet daifuku. In the mouth, there are flavors of boiled syrup and brown sugar, followed later by a robust sweet mochi and astringent rice flavor. When swallowed, it rises with a heavy sweetness and strong, complex bitterness. The lingering sweetness and bitterness was followed by a slight acidity with hints of cherry and plum! A mouthful of rich sweetness and umami on a grand scale! It is sweet and very rich, so I would like to drink it on the rocks or at a higher temperature for a leisurely sipping! I had an image that Shinshin means dry, but I guess it means very sweet since it's on the back side of the bottle!
