The nose has a clear ginjo aroma and a lactic acidity. Slightly syrupy sweetness and melon fruity.
In the mouth, there is a gentle sweetness of rice and acidity reminiscent of fresh citrus fruits.
The sharp spiciness and bitterness soon rush in to finish, and the lingering acidity is gradually followed by plum and shiso-like acidity.
Although dry, this sake had a strong umami of rice and an impressive change in acidity!
It is delicious!
