They use Omachi and Yamadanishiki! This sake is a collaboration with Sakaya Kurihara in Naruse. The aroma is subdued and cozy, but has the fruitiness of pears and peaches, and the moist sweetness of wasanbon. In the mouth, a firm marshmallow-like sweetness spreads on a smaller scale. Slightly melon-like as well. As it is swallowed, the pungent bitterness derived from the alsobe rises in a rush. The lingering finish is a complex combination of sweet, spicy acidity and strong bitterness! Overall, it is sweetness-driven. The sweet bitterness asserts itself in the second half while the acidity is intertwined. Personally, I got the impression that the sweetness was somewhat persistent and the alsobeymented miscellaneous tastes were stronger. If you like sweet, this would be a good match for you. After a week or so, it tightens up, everything comes together, and it's outstandingly good! Hahayotsu is a sake that shows its true value when laid down!

As you swallow, the sweetness rises in a complex mix of bitter and spicy tastes, and the lingering taste is firm and sweet like carmine sugar. When warmed, it has an even greater umami flavor and a heavy, yet mild and moist sweetness. This is good sake! It's delicious. I could feel the full potential of Hitogokochi!

Ikuhashi Mashu "Maho" Junmai Ginjo This taste is a sin. I was attracted by the phrase "This taste is sin. The aroma is slightly sweet and fresh with a pear fruitiness. There is also a shimmering rice flavor. In the mouth, after a fluffy pear and strawberry flavor, there is a sugar water sweetness and a slight sourness. As it is swallowed, a clear bitterness appears and rises. The aftertaste is clean and refreshing while retaining a graininess with a touch of sweetness. When cold, it is beautiful and suitable for eating, but I felt it was a bit watery. When warmed up, it has more nuts, grains, sweetness, and complex flavors of Yamahai, giving it a profound impression, which I liked! I think it will be very tasty from warm heating. The label is beautiful, and this is a brewery I would like to pursue in the future!
