I wrote about the variety of this sake, Dewha Kaze, and the Bodhiji principle, which I'm sure is fine. The dew-leaf style is very mildly sweet and mildly acidic, with a slight bitter aftertaste that leaves a soft taste. It has a slightly bitter aftertaste and leaves a soft taste. I had it with a meat and veggie stir-fry with a little butter, but I think it was a little too spicy! It's fruity, but there's also a solid rice-derived aroma deep inside, which shows that this is Junmai. I don't know where to find the sake principle... The acidity is very mild and the scent has some rice-derived elements, so it's hard to distinguish it from a normal Junmai sake or a Junmai Ginjo. But the fact that there's a hint of nigorizake is the Ikizake.

It's Yamada-Nishiki from the Yoshikawa-cho Special A district in Miki City. It's the same reflex that makes Burgundy lovers drool when they see the word "Grand Cru" on the label, and it makes me grin. It's so smooth to drink that it's hard to believe it's 18% alcohol. It's mild, with a mouthfeel that only a hiya-oroshi can deliver. The volume in the mouth is what makes it Yamadanishiki. I think I'm beginning to understand the character of the rice.
