It's Yamada-Nishiki from the Yoshikawa-cho Special A district in Miki City. It's the same reflex that makes Burgundy lovers drool when they see the word "Grand Cru" on the label, and it makes me grin. It's so smooth to drink that it's hard to believe it's 18% alcohol. It's mild, with a mouthfeel that only a hiya-oroshi can deliver. The volume in the mouth is what makes it Yamadanishiki. I think I'm beginning to understand the character of the rice.
