Tsuruya-cho UMAMI Yamadanishiki 100% PB of this shop! It's not every day you get to drink a Junmai Daiginjo, you know. Thank goodness. The aroma is very full-bodied. The initial impression on the palate is of fruitiness, but it gradually dissolves again.

Tsuruya-cho UMAMI Shinsei's drinking comparison set. This is No.6's previous generation No.6. Flat rice polishing Pure rice brewed in the Akita style Nope. The Akita style is more fruity right after you drink it. Anyway, in both cases, the element is this! I can't identify it as such. I think that's the hallmark of a good sake, the elements are perfectly integrated, and the impact it leaves on the palate is just pleasant. So this is the rumored Shinsei-san! I was a new political virgin, so I was shocked. It's good. The strongest balance.

The aroma is gorgeous but gentle, the bitterness and the deliciousness lingers on for a long time. I wonder if this lingering taste is the characteristic of the Ikkonjimajimajima. YK35 is a Kumamoto yeast that is gorgeous, but not too gorgeous. I tried to write it down on the tasting sheet, but it's not so easy...

You'll be surprised at how much more fruity it feels than when you drink wine. Isoamyl acetate. Is this the taste made from rice only? Sake is amazing. The yeast is amazing. I feel that Masumi is definitely tasty for sure.

92% polished rice! The same as the usual rice. It has a beautiful aroma and a smooth mouthfeel, but has a complex aftertaste that lingers in the mouth because of the low polish. Rice with chestnut and grilled salmon. The taste of autumn is the best!

This is my first noble brew. It's not as sweet as I expected. I thought it would be like a noble rot wine, but if it was blind, I might think it had a rich ginjo aroma. However, the unique feeling like beef jerky at the beginning of the aroma is how you can tell if it's right or not.

Diploma Secondary Set Part 1. It's 17.8 degrees alcohol by volume! It's fruity without being too high in degree. This seems to be a typical ethyl caproate scent! Gorgeous, crisp apple and muscat aromas. It's clear, fruity and refreshing, but with a firmness that comes from the alcohol content. Easy to drink! The one that makes you drunk.

This crystal has a slightly silvery hue with a translucent feel. The nose is a gorgeous first impression, with yellow apples, mushrooms, cloves, cinnamon, cooked rice and yogurt. The taste is a rather strong first impression. It has a mild sweetness, a smooth acidity, a bitterness with a good flavor, a lively balance and a rather long finish. 100% Yamadanishiki from Hyogo Prefecture Firaizumi is the third oldest sake brewery in Japan.

Transparent, slightly pale golden yellow. White wine tones. The first impression of the aroma is full and mellow. Cooked rice, mushrooms, yogurt derived from mountain waste, sour cream, fermented butter and aged cheese. The first impression on the palate is rather strong. Sweetness, roundness and acidity, and bitterness, giving a full-bodied taste. The balance is rich, thick and powerful. It has a long finish. It is made from 100% Yamada-Nishiki rice grown in Yoshikawa-cho, Miki City, Hyogo Prefecture (Special A district). Polishing rate is 70%. This massive texture is a characteristic of Yamada-Nishiki. Yamabai has a dairy-type aroma.
