This is the first Souhyo. Junmai Daiginjo brewed with Gohyakumangoku from Tochigi Prefecture. From the label, it is a summer sake. There is nothing strange or sharp about this sake, and you can feel the umami and sweetness of the rice straight away. It is a good sake that leaves a good impression.

On a business trip to Sendai, I purchased a Sendai Station limited edition sake, named Sendai Ekimasamune. I did not expect much since it was displayed at room temperature at the station kiosk, but it was delicious, with a perfect balance of sweet and spicy flavors. I try to buy regional limited edition sake whenever I go on a business trip, and this kind of encounter makes me happy.

We visited Kiuchi Shuzo, famous for its craft beer and whiskey, and tasted their Junmai Daiginjo. The yeast, water, and rice are all from "pure Ibaraki" in Ibaraki Prefecture. It is delicious with a beautiful rice sweetness. There is a lot going on in my life, but a good sake is an important thing that resets my daily life.

This is my first time drinking black beef. It has a strong alcohol content of 18-19%, which is probably why it has a strong alcohol taste and a robust umami flavor. It is very different from the refreshing lightness of Kido, which is also from Wakayama Prefecture. Sake is interesting.

Isoboast after a long time. It is a special junmai of Omachi. My image of Isobojyu is fruity like melon, but the aroma is mild and the alcohol and umami spread. Maybe because it is Omachi.

This sake is a collaboration between Ozeki, a local supermarket, and Tsuchida Sake Brewery. The sweetness is moderate, intertwined with sourness and bitterness. The taste became calm on the second day after opening the bottle.

It is good that I can taste the beautiful sweetness that is typical of Toyo Bijin, but I am not sure what the point of the limited edition is. It is good that I can enjoy it so it is good.

I bought a bottle of Koroh for the first time, which a senior colleague of mine had told me was very tasty. Although the alcohol content is low at 15 degrees, it has a robust flavor and a caramel-like aroma. It is better to drink it warm than cold. It reminds me of my grand-senior who was very strict. He must have liked this kind of sake, which is not the latest style. I can understand why.
