On a recent business trip to Fukushima, I bought a bottle of Ippouki in Tokyo that was recommended to me by a local. It has a mild and gentle flavor. I drank it cold, but it seems to be better at room temperature.

The first Morishima. Junmai Ginjo Yamadanishiki. Good balance of acidity and gentle sweetness. A good discovery early in the New Year.

Personally, I felt it would taste even better if I put it in a glass and let it sit for a bit 🍶.

I got a bottle of sake that Toyo Bijin offers at Bills. I thought, "Bills is all about pancakes, right?" But then I thought it might be a good match because it has a bitter taste as well as a sweet taste that is typical of Toyo Bijin. I would like to try pairing it at a restaurant.

During a business trip to Fukushima last week, I had a bottle of Hirotogawa Nigori Junmai Namaisake that was on sale at the Fukushima station's product center for one person. It has a fresh fizziness, sweetness, flavor, and bitterness. I can see why it is so popular.

The first Ni-Utsuri. Junmai sake with 65% polished Yamada-Nishiki. Moderate gassiness, calm sweetness and acidity. Not spectacular, but a delicious sake.

Today I completed my first race of the season, the Setagaya 246 Half Marathon. As a reward for not being able to beat my personal best, I opened a bottle of Jikin, which I won in a lucky draw the other day, while the sun was shining. I got the impression that the beautiful sweetness typical of Jikin prevailed over the complexity of the sake. I think the pleasant tiredness from running a half-marathon and the end of my abstinence from alcohol have further enhanced the flavor.

Jay & Nobby, thanks for your comments. It is seeping through right now. I'm afraid I won't have it until the big drama and then I'll be asleep.

We had a bottle of Akabu Junmai Sake, our most recent favorite. The sweetness is light and elegant. It is a blessing to be able to end the day in good health with such a good sake.

I had bought a bottle of Junmai Daiginjo from Tobiroki as a reward after finishing the Tokyo Legacy Half Marathon, but was frightened by the heavy rain and did not run the race. But I didn't run the marathon because I was afraid of heavy rain, but I drank the Tobiroki as a reward. It is beautiful and delicious. Nothing but delicious.

At Kagoya Sake Shop in Shimotakaido, they sell a sake made from Akaban Omachi rice called Kunihira-mai, which is produced by a rice farmer named Kunihira-san. I immediately bought a bottle of Sharaku, which I like. It has an intense, fruity aroma and a beautiful sweetness that is typical of Sharaku. The price has gone up, so I don't get it as often as I used to, but Sharaku is definitely a good sake.

I drink my regular sake, Yukino Kayasha Yamahai Junmai, at room temperature. After work, I come home, get out of the bath, and have my usual drink with my wife, who does not drink, while talking and laughing about trivial things and eating a normal dinner. Once again, I am truly thankful and happy.

Nanada after a long time. Hiyoroshi, Omachi, 75% polished rice. When I tasted it at a liquor store, I wondered if Nanada had such a fresh aroma and flavor. I thought so and bought it immediately. I was surprised to find such a fresh aroma and flavor in this sake.

I visited an elementary school classmate who works for the Gunma Prefectural Government and received a set of three bottles of Akagisan, a local sake. He's always been a made guy, but he hasn't changed. With the joy of seeing him for the first time in a long time still in my heart, I opened a bottle of Gohyakumangoku Junmai Ginjo today. It has a crisp and tight rice flavor.

We had a bottle of Hakutsuru Shouun (Hakutsuru Nishiki Junmai Daiginjo), a high-end line of Hakutsuru Shuzo. Although it is a major sake brewery that mainly produces popular sake, I have heard that its technical level is quite high. The Junmai Daiginjo has a clean sweetness without any cloying taste, followed by a slight bitterness at the end. The 280-year history of the brewery is not a mere joke.

On my way home yesterday, I picked up a bottle of Amami Junmai Daiginjo Yamadanishiki at a liquor store. There were also Omachi and Aizan on the shelf, but I chose the Yamadanishiki. The sweetness of the rice and the acidity that I could feel at the same time were soft and elegant. It is a good sake.

Junmai Daiginjo from Sudo Honke in Ibaraki Prefecture, which was founded in the Heian period and is said to be the oldest junmai daiginjo in Japan. It has a more complex graininess and umami, different from the fruity aroma and beautiful sweetness that one might imagine from a modern junmai daiginjo. Perhaps this is the kind of sake that Japanese people used to enjoy in the past.

It's hard to find it in Japan, but I was lucky enough to find it in a store and bought it immediately. It has been a while since I have had it, but it is still really delicious. The melon-like aroma, sweetness, sourness, and bitterness are all elegant and well balanced. No wonder it is so popular.
