Good evening, I guess it's been a while since I've been there, but here's a collaboration sake from this brewery: 💁‍♂️ Nichinichi Homasu 2023BY✨ This one is made with Hohomasu from Hananaka-san, who brews sansho in Kumamoto. I'm getting excited whether I like it or not. ⤴️ The bottle is quite gassy and nice when opened 😊 When poured into the sake cup, it has petit bubbles🫧🫧🫧🫧 Standing aroma is near odorless with a slight herbal, bluish nuance. In the mouth, it is a perfect adult cider 🥤 The gas, acidity, gentle sweetness like pear or apple, and bitterness and sharpness on the back end are in perfect harmony and the sake goes on and on 😋😋😋💮 It was delicious 💮💮.

Tonight, I went out for a drink and came home drunk, but I didn't have enough to drink, so I opened a bottle of this sake: 💁‍♂️ Chiyonohana Special Honjozo Shiboritate Namazume 2024BY✨. This is a sake that is distributed within the prefecture by the Sugihara Sake Brewery, which brews the famous Imi, the smallest sake brewery in Japan 🙌. This one is a complete clear sake. Tachika has a darker pineapple/tropical flavor compared to Imi 🏝️, but I personally like the more mature, clear pineapple flavor ☺️. The flavor is mainly sweet and tasty, but it has a clear, crisp aftertaste and is made so you don't get tired of drinking it, which I really prefer 😋😋😋😋. I can feel the depth of Mr. Sugihara's spirit in this bottle, but I don't have his usual poems 😅.

Tonight, after working out 🏋️, I have a tendency to drink even though I know it's the natural enemy of muscle growth, 😱. I'll keep it to a small amount here out of guilt 😅. Wakanami NAMICAN 2024BY 🌊🌊🌊🌊 This is my favorite Junmai sake from Wakanami in a can bottle ✨ I procured two bottles, one for drinking and the other for going out 👛. The aroma is almost odorless and slightly herbal. The taste is mainly sour and juicy like a fresh muscat 😋😋😋😋😋😋 The second half has more alcohol and a spicy heaviness, which makes it even better that it is not only shabby👍 I can't go wrong with Wakanami after all 😊.

Tonight, we're having a late lunch, an early dinner, or an early evening drink on our day off 🙌! I'll be drinking with this one for the first time in a long time: 💁‍♂️ Kaze no Mori Challenge Edition 2024 🌪️🌳 The brewer made a Kaze no Mori that he wanted to drink, and as usual, the opening of the bottle is accompanied by a pleasant sound of gas escaping from the tank. The taste is quite restrained in terms of gasiness, but the assertive acidity, sweetness like condensed milk strawberry 🍓, and silky smooth flavor are very delicious 😋😋😋😋 The back palate is just a bit heavy on the tongue, but overall it has a light taste 😊.

Collage Junmai Ginjo Orikagarami Ⅱ Nama Shu 2022BY✨ I'll start with the second one since the first one was uploaded last year 🤗. The aroma is not at all old and has a soft smell of rice. Tonight, we have a sake from this brewery that we haven't had in a while 💁. NIIDASENSHU Taru Sake 2024BY It looks like a barrel-aged pure rice sake with no additive yeast, and the liquid has a light pinkish hue 😳. The aroma is a lactic fermentation nuance of the sake yeast in the barrel-aged aroma, and the taste has just the right amount of wildness of the sake yeast and the depth and umami of the matured taste, making it surprisingly easy to drink and delicious 👍.

Tonight, we open a bottle of this season's can't-miss 💁. Sono Kangiku OCEAN99 Shiroginoumi -Snow sea- 2024 ⚪️🩶🌊 I got this one again this year, which is hard to compare with the Denshogiku Red that I had the other day 🤗. The bottle has a vent hole so you can open the bottle without difficulty 😉. When poured into the sake cup, it has a gorgeous aroma of tropical fruits, The taste is sweet and juicy with a hint of sourness and a bittersweet spiciness on the back end that makes it easy to drink 😋😋😋😋. However, personally, I would definitely prefer a rambunctious horse with full gas 😅💥😋⚠️

Tonight, I'm opening a bottle of Okiku here for the first time in a long time 💁🌼. Koei Kiku Sukai Seikai 2023BY🌊🌊🌊 Is this a new brand? I was curious about the specs of using 100% special pure polished Yuyamanishiki, which is why I loosened my purse strings 😅. From the nose, it has the freshness of grapes and a rustic impression of smoked grains. The taste has almost no gas and the impact of sweet and sour like when you eat a grape is just as delicious 🎯😋🐴. There is a decent amount of bitterness in the aftertaste, which is also nice 🤩. Oh, I'm tempted to try the Sunokure Yamadanishiki and some of the others in this season's lineup again 😊.

Tonight, it's been a while since I've been to this sake brewery in Akita 💁. Isshuikusuisei Premium 2024BY✨✨✨✨ This is a high-end line of Fukurokuju Shuzo. It's a wine-like departure 🤩🤩. The aroma is a mild grain aroma with a hint of citrus. The taste is characterized by a beautiful acidity and a grapefruit-like sweetness and bitterness, and I feel that it has a wide range of uses both as a stand-alone sake and as a food sake 🤗. It seems to be a pure OSPEC but it has a mature taste and is very delicious 😋😋😋😋😋😋.

Tonight, we opened a bottle of this new sake nigori series 💁. Ohmine 3 grain Winter no Otosore 2024BY✨ This is Ohmine's first regular winter sake in a while. From the moment the bottle is opened, the piquancy of the wine heightens expectations. ☺️ When poured into a glass, it has a petite, silky appearance, The fruity aroma of melon that rises in the air, the juiciness that makes you feel as if you bit into the flesh, and the richness and sharpness of the finish are just like an adult melon cream soda🍈🥛🥤 and very delicious😋😋😋😋😋. I liked it even better when it was well mixed with the lees, it took it to a more mature level 😊.

Tonight, I'm going to drop my first series, which has been uploaded on Sake-no-wa a lot lately 💁. Iraka, silver and black (birth sake) ✨✨✨ This will be the first piece from a new sake brewery that was created as a result of a business succession ㊗️👏 When you open the bottle, you will feel a nice gassy sensation 🫧. When you pour it into the sake cup, it has a relatively gorgeous standing aroma of pears, melon, and grains. I don't know the specs of the rice used, but I get the impression that it is Yamae Nishiki, Miyamanishiki, or Hitogochiki, and I think it can be served alone or as a food sake. I look forward to future releases 😊.

Tonight, we have a different kind of sake, so here it is 💁. haacoba × tsuketaro -kinki- ✨ This sake is a collaboration between haacoba, famous for their craft saké, and Tsuketero Sake Shop 🍶. The production process and specs of the sake show that after the sake making process, pure rice vinegar is added to the sake and fermented. Anyway, let's try such a sake ☺️ The cap of the crown opened surprisingly quietly, and when we poured the sake into the cup, there were a few air bubbles. The aroma of pure rice vinegar or apple cider vinegar is instantly present, but if you put your nose close to the glass, you can smell not only the vinegar aroma, but also a complex aroma of honey and flowers (like mead) 😊. The taste is also sour like a sake made with chili gas and white malted rice, but it has sweetness, umami, and bitterness in the latter half of the taste, so it's just delicious 😋😋😋😋😋😋. It's also low in alcohol and contains vinegar, so it's a very healthy drink for your body. ☺️

Tonight, we are opening a bottle of this phoenix 🐦‍🔥 as we did the other day 💁. Houou Mita BLUE PHOENIX 2024🐦‍🔥🫐 This was first introduced at this year's CSW, but now it's a regular release, and I couldn't suppress my desire to buy it, so I'll drink it early 🍶. The opening of the bottle was no accident. It has a cork stopper which is hard to open like the other day's WP, but thank goodness for fizzy type. ☺️ The aroma is mildly cereal, but once you take a sip, the sweetness of Muscat and Japanese pear fruits are wrapped in sparkling bubbles 😋😋😋😋😋😋. The aftertaste is also dry like sparkling and even more delicious 😋😋😋😋.

Yoshida Kurau - Night & Dance- 2024 🌃🕺✨ I would say this is my favorite brand from this brewery 😊 It is light and easy to drink with a low alcohol content, yet it has a solid volume and a nice sharpness. It has a solid volume and a nice sharpness👍 The aroma is mild, with a hint of cucumber and muscat. The taste is a delicious dry sharpness from the sweetness of the rice with a dance of chili gas and acidity on the tongue 😋😋😋😋😋😋. However, I have the impression that the umami is a little pale, perhaps because the last time it was laid down for a year and a half, or perhaps because the rice in this vintage is hard to dissolve, but it is definitely delicious. ☺️

Tonight, I will open a bottle of SAKE PARK 4 and open a bottle of this one. Tatami Abe Seishukudo PB Sparkling 2023BY✨🫧. I'm feeling a little drunk on alcohol, so I chose to focus on the drinkability of the shuwashu🫧 ☺️ The tape on the bottle says to be careful not to blow out ⚠️💥 and of course I didn't follow the advice to drink it within a month of shipping, so it's in a state of secondary fermentation in the bottle and magma is building up, so I went to the bathroom🛀 and tried to open the crown with a bottle opener little by little, but the gas was too strong. SENKOU KABUTOMUSHI KABUTOMUSHI Araubashiri 2022BY✨ This is Kabutomushi but in Araubashiri ver 🙌! From the aroma, it's a bit too long, but I can feel lemon 🍋 at the bottom of it. The taste is very sour and mature lemon squash 🍋🥤 but it's very tasty with the fullness and richness of rice 😋😋😋😋. I still regret letting it sit too long 🙇😋😋.

Tonight, we are trying our first series of this brewery 💁. Jyugodai Kuroemon Junmai Ginjo Miyamanishiki Shigome 58 2023BY✨ It's amazing that this sake brewery in Kiso County, Nagano Prefecture has been around since 1650 (Edo Period) 🤩👏! The sake rice is Miyamanishiki. The aroma is mild and grain-like. The first sip has a pleasant acidity and a hint of white sugar, followed by a grapefruit-like bitterness in the second half and a crisp finish. You will not get tired of drinking it, and you will easily drink more 😋😋😋😋. Brings back memories of eating grapefruit with sugar when I was little 😊.

Tonight, I would like to open a bottle of a collaboration sake from these two breweries 💁. Tanaka Sengyo Itoshima pesticide-free Yamadanishiki Junmai Sake ver. 2021✨✨✨ Tanaka Rokugo/Itoshima's Itoshima Sake Brewery and Senkyu's collaboration sake, but as you can see, 2 years have passed 😅... I think it's fire-brewed, so I'll drink it without worrying about it. First of all, the aroma has pear, muscat, gourd, rice grain aroma, lactic acidity from the sake yeast, and a little honey maturation aroma, which gives the impression of increased complexity due to 2 years of age 😊. The taste is delicious 😋😋😋😋😋😋😋😋😋 The aftertaste is very good with umami, richness and tangy dry accent by makashi and maturity👍 I thought it was a bit like Senkyoku, but it was made by Itoshima Sake Brewery, so it makes sense. （I thought it was a bit like Senkou, but since it is made by Itoshima Sake Brewery, it makes sense.

Tonight, I'll open a bottle of this one for the first time in 2 years, as it's a timely sake & the 10th of every month is Tenbi Day 💁. Amami Shinshu Junmai Ginjo Nigori Nama 2024BY❄️❄️❄️ Tenbi's new sake nigori aka "Yukiten" has made a comeback after a 2 year absence 🙌 I opened the bottle quietly and calmly: ☺️ The aroma is a muscat flavor, which is typical of Tenbi. ‼️ However, when I took a sip, I couldn't feel the shwashiness that I was expecting. It's delicious 😋, but it doesn't have the impact and impressive balance that makes you say it's delicious in one sip 😢(I really wish we could compare the two, but other than the Tachika, they seem to be different sakes). (I really wish we could do a drinking comparison, but I still feel it is a different sake except for Tachika) I hope that they will improve it over time, but I feel that the wall will be much higher and steeper than I imagined. (I don't think I will buy it again.) I am sorry for my dry comment after a long time 🙇.
