Tonight, we will compare these two bottles in support of Noto's sake brewery 🙌 First up is the first bottle. Takeba Noto wo Kozo Junmai Sake in Akabu Shuzo🔴. This sake is brewed with a sake rice called Yumemizuho, which is new to us. This sake was brewed with a sake rice called Yumemizuho, which is new to me and there are many more sake rice that I don't know about. ☺️ The nose has a pleasant melon aroma with a hint of sourness. The taste is also very delicious with a slight chilli and fresh melon juiciness that makes it easy to drink 😋😋😋😋 The aftertaste is also slightly bitter and spicy with a sharp taste that never gets boring 👍

Good evening, this is my second post 🙌 Izumikawa Junmai Ginjo 2022BY ✨ This is a well-known Tobiroki sake distributed in the prefecture. I bought the previously posted Kasumi Honjo which was very tasty, so I'm really looking forward to it: ☺️ The aroma is a clear junmai sake with a melon/cucumber aroma that I like. The taste is very delicious 😋😋😋😋 The aftertaste has the alcohol and dryness of sake but is very well balanced and impeccable 💮💮.

Good evening, this is my first post in a long time as I have been away on business since last weekend 😊. I received this last year and would like to try it again this season 🙌 Shin Tsuchida Active Nigori Nama 2024BY✨ We enjoyed this last year as well, so the taste is guaranteed. I opened the bottle and let it rest quite cold, so it was easy and effortless. The first sip of the clear sake had a sweet-swirling sensation like a clear melon liqueur mixed with soda. But soon the dry liquor quality comes in and it tastes mature 😉 When you mix the more lees at the bottom of the bottle, it quickly becomes bloated and soft, almost like creamy yogurt or makgeolli 😋😋😋😋😋. I love nigori sake 😙.

Good evening, we haven't opened the empty rainy season, but it's very hot 🥵. I want to drink a shuwa shuwa type drink, so I opened a bottle of this one 💁. Hanaboe Splash Yamahai Active Nigori Unpasteurized Sake 2023BY🫧. After drinking SODA POP the other day, I happened to find it on sale and popped it in 😆 I wanted to compare them, but let's not worry about that. The bottle was well chilled when I opened it and I got a light cloudy top. The aroma is cucumber and mild. The gas and the first sip has a bit of sweetness from the rice, but it is a bitter melon soda 🥤 After a while, it is automatically stirred in the bottle and turns into nigori (nigori sake). This one has more creaminess and dryness, and it is very dry and lingers in the back of the throat. I looked at it carefully and realized that the alcohol content is 17%, so it is easy to drink because of the gas. It's a refreshing and irresistible taste that will take the edge off your midsummer blues 😋😋😋😋😋.

Good evening, I'm posting a series of posts that I've been sleeping on for a year 😅. La Jomon Screaming in the Dirt Fire Iri 2022BY😱😱😱😱 I'll try to drink it because I have to circulate the stock. I was going to compare it with the brown bottle (🟤) because it's Rikuu 132 & No.6 yeast, but I'll just drink this one because I'm sick of wasting it. The aroma is a mild and clean gourd aroma, but I can't think of a good way to describe it 🤔, but it has a peculiarity that is typical of indigenous varieties, and I feel grape-like and chestnut-like. The attack is grape🍇sweet and acidic, and the rice is easy to drink with a nice fullness 😋😋😋😋 The second half is mainly astringent and dry, with a punch👊and it can be used as both a stand alone sake and a food wine. ☺️

Tonight, the weather is getting hotter and I'm already feeling a little bummed 🥵. Here's my first alcoholic beverage post to beat the heat 🙌 Seikyuu Soma Dori Series UMAUMA Umauma Junmai Akkatsu Nigori Nama 🐴🐴🐴🐴🐴🐴🐴. I've been interested in this brand for a while but I couldn't help but pick it up when I saw that it was an active nigori sake. ☺️ The bottle was opened easily as it was cold and chilled. 😮‍💨 The aroma was mild and smelled like yeast No. 6. It tastes like clear melon soda 🥤🐴🐴🐴🐴🐴. The dry dry aftertaste is very noticeable and it is very dangerous to drink it too fast. ⚠️ This was a horse that I will definitely repeat 😋🐴😋🐴😋😋.

Tonight, I'd like to share with you this 💁 of the Get from GW's expedition to Ueda. Shinshu Kamerei Junmai Ginjo Ueda, Inakura no Tanada Hitogochi Unfiltered Nama Sake 2023BY This turtle-colored bottle looks great anytime you see it 🐢😎. Also, it's been 2 years since 2021BY and it's a bottle 😆. I'm going to enjoy it to the fullest 🙌! When I open the bottle, the gas escapes and when I pour it into the glass, it has a nice juicy aroma of sweet honey apples: ☺️ The taste is also delicious with chili gas, sweetness and fullness with a refreshing acidity and a bit of bitterness on the back end 😋😋😋😋😋😋. I will enjoy your turtle for a while 😊.

Tonight, I will pair this with the Yamagata beef (Yonezawa beef) 🐮 I received as a gift 💁. Pukupuku Brewing × Tsuketaro Sake Shop Pukupuku Botanical Doburoku✨✨✨✨ This is a collaboration sake between Okini's Pukupuku and Tsuketero. The reviews of this sake make it taste like a sweet calpis soda, so I was sure it wouldn't be a bad match 🙌! When I opened the bottle, it was quiet so I could enjoy the top clearness 😄. It's clear, but the sweet and sour yogurt lactic acid, hops, herbs, and citrus are all in a shuwa shuwa soda 🥤 It's very good 😆 After a bit, the gas gradually starts circulating in the bottle and it becomes cloudy doburoku. When doburoku is poured into the sake cup, it has a cloud-like foam like ☁️, like beer foam or meringue. The taste is no different from that of clear sake, but the gas is very viscous and you can't get enough of it. It's like a doburoku version of the Hizirizm active sake mother sake that I just wanted to buy 😋😋😋 and it went well with meat (sukiyaki) 😋😋😋.

Good evening, we are already half a year away from the end of this year. And since the 2023 Brewery Year is coming to an end, we are opening a bottle of this one 💁. Tian Ming Ichi Hui Leap No. 2024 ✨✨✨✨ A Junmai Daiginjyo hi-iru-shu made from Yamada-Nishiki from Aizu, Fukushima Prefecture, polished to 30% 🍶 This is the third and last of this leap issue. Mild and not too showy aroma of muscat and melon. The mouthfeel is sweet, fruity, and voluminous with a hint of acidity 😋😋😋😋 The finish is very elegant with a hint of dry bitterness that disappears without a hitch ☺️

Tonight, the first can of sake 🥫 in the house here 💁‍♂️ Tasake Junmai Daiginjyo 40% 5 parts Momota 2023BY✨. I just happened to be able to buy a can of Tasake and I'm going to drink it 🙌 I think this is the first time I've had a sake rice called Hyakuden (Hyakuden) too. The aroma is a bit weak and sugary. The taste is rich and delicious with an assertive sweetness and mild acidity even on the attack. The second half is spicy and bitter classic sake-like 👍. Easy canned sake but seriously delicious sake inside 😋😋😋😋 It was a quintessential Tasake 😊.

Tonight is the second bottle of Sairai for drinking 🙌 Here's the red one: 💁‍♂️ Sara the starry night Altair 2023✨ I let this one sit for almost a year too😅. It's quite different from Vesper, the aroma is clean, mature and citrusy, similar to Bunraku. It tastes like a chili gas, and the acidity is the same as Vesper, but it's tighter and more bitter than sweet. Personally, I prefer this one. It is easy to drink and will be gone in no time 😋😋😋😋. Will there be an Altair this season ⁉️

I'd like to do a Sairai drinking comparison this evening 🙌 The first bottle is the familiar blue one here 💁‍♂️ Sara the starry night Vesper 2023✨ I've let it sit for over a year again, I think it's a little less gassy, The aroma has a lactic peachy nuance that is typical of Vesper. The taste is also dense with a pleasant acidity and a sweetness that is assertive 😋, yet the aftertaste is more refreshing than expected, so you won't get bored of it. Vesper is a good choice 😋😋😋😋😋.

Tonight, I'm opening a second bottle since it's the weekend 💪. Terada Honke Daigo no Shizuku Bodai Hashimoto 2023BY✨ Today, I've been completely captivated by Terada Honke. I drank this brand at SAKE PARK 3 and enjoyed it so much that I immediately bought a bottle 🤣. The bottle was second fermentation in the bottle, so I was afraid to open the bottle without any difficulty 😌. When I poured it into a glass, I could feel the gas rising from the bottle and it was slightly cloudy. The aroma is characterized by the scent of brown rice and lactic acidity from the Bodai yeast, probably due to the low refining. The taste is sweet and sour with a sense of gas and lactic acid Yakult 😋😋😋😋 The finish is crisp and clean with the umami of rice on the back palate. Suitable for aperitif and after-dinner drinks, but very tasty 🍶.

Tonight is the Friday before the holiday, so I opened this bottle to accompany the Hirame and Kinmedai sashimi and grilled salmon 💁. Collage Junmai Ginjo One Time Hiiru 2022BY✨ It's been a long time since I've had a bottle of Sherlock! And as usual, it's a one year old 🤣. The aroma is greenish banana. The taste is soft sweetness and acidity → full rice flavor → dry light sharpness and impeccable taste, you can drink all the time 😋😋😋😋😋😋. Of course, it goes well with meals. I enjoyed it to the fullest again 💮💮.

Tonight, I opened a bottle of this famous sake in the first series to go with dried Hokke fish 💁. Takasago Junmai Daiginjo Hi-iri 2023BY✨ It's from a different line of the very popular Jikin brand 🍶 Jikin is not so easy to find, but this one is usually available at some time (the price is ok 😅), so we haven't had it at home so I'll open it 💪. When I open the bottle, I hear the sound of gas escaping and it feels surprisingly fresh ⁉️ and exciting ☺️ The aroma is a gentle melon/uricane aroma typical of Yamadanishiki, and the taste is fresh and exquisitely delicious with chili gas, acidity and fruity freshness on the tip of the tongue 😋😋😋😋. The finish has a spiciness that is typical of traditional sake, but overall it is light and easy to drink. It is not often that I get a chance to enjoy Jikin, but this is a bottle that will give me great satisfaction 💮.

Tonight, I opened a bottle of this one to accompany my dinner of kochi and kampachi sashimi and squid cod roe 💁. La Jomon Six Nama Sake 2023BY✨ We happened to have a lot of Six Nama Sake on hand, so we'll have a quick bottle. When I poured a glass of chilled sake, it had the usual mild uri aroma, a beautiful acidity, a little sweetness and citrusy flavor like Pocari, and the second half was a mix of astringent, bitter, and spicy flavors. It can be served alone or as a mealtime drink. I'm going to try the "Murasame" that some of the connoisseurs in the area are trying later 🙌

Tonight, I've had the same sake many times, but this is the first time I've had the same brand. Maki machine TSUBASA Flattened rice milling x Micro bubble rice washing Unfiltered Nama Sake 2023BY✨🫧🫧. I will look up what this micro-bubble rinsing is later, but I have only heard that rinsing rice is important for making good sake. As a nomurier, I'm not so sure, but the question is whether it tastes good or not 😆 So let's get to it. Etiquette is summery and cool 👍. First of all, both aroma and taste are sweet and refreshing cider 🥤 Slight petit gas and sourness in the mouth is pleasant 👌 then comes a soft sweetness almost like cotton candy, juicy. The finish is alcoholic and voluptuous, yet crisp and clean. It was a sweet adult cider 🥤😋😋😋😋.

Tonight, I'll open my second bottle of Schwarzwald 🫧🫧🫧🫧🫧. This one has already been tasted at the recent "Young Dawn" 💁. LIBROM x Pukupuku Brewing x UNITED ARROWS Hops, tangerine and mint 🍊🌿. First of all, it seems to be a secondary fermentation in the bottle, so we had to struggle for about 5 minutes to open the bottle. (I'm using LIBROM bottles, so the neck of the bottle is short so it's easy to blow out 😅) I only drank a small amount of the Young Dawn, so I'll have to reiterate that it has an orange-tinged color and light cloudy foam 🫧 The aroma and taste are just as the title says. In a word, it's an adult Fanta Orange 🍊🤩. It's really just a carbonated juice 🍹, but the minty freshness and hop bitterness are irresistible 😋😋😋😋😋😋.

Good evening, it's mid-June and the weather is sweating ☀️ with no sign of the rainy season ☔️, so I wanted to drink something bubbly, so I decided to try this one from My Favorite 💁. Abe × Tatsumi Seishukudo PB Sparkling 2023BY I was looking for a bubbly drink, so I decided to try this one 🫧🫧🫧🫧🫧. First of all it's confusing but it's not from this season, 😅 (I wonder if they will release it this year?) But I'll open the bottle because I'm sure it's fine since it's sparkling and was properly refrigerated 🍾. It was a little tricky to open, but no problem: ☺️ As I'm opening the bottle, the sweet, fresh fruit and lactic acid aroma comes out, and at this point I'm on the verge of KO 🥊 The slightly cloudy, piquant gas is enjoyed on the tip of the tongue, while the sweet and delicious taste of the rice spreads and the sharpness of the aftertaste keeps me going and the endless loop begins: ♾️ I still like it and it's delicious 😋😋😋😋. It's 500ml so you can drink it in no time 🍶.
