Saitama Super Arena Keyaki Plaza At the Dawn of the Young I went for this sake on the 18th. Unfortunately, it was cold and rainy... We lined up before the event started, checked in for tickets, and went to the rice and agave booth first. It was just after the start of the event, so there were not many people, but I was the first one to get in. I was given a bottle directly from Mr. Okazumi, the brewer of the brewery. It is a dobrok, so there is some graininess to the rice. The fruity aroma of nigori sake is usually blurred when it becomes cloudy, but this one had a strong muscat-like fruity aroma. It also has a nice balance of sourness and acidity. This is delicious. The alcohol content is low, so it goes down smoothly. I drank the strained version at the end, but I personally prefer this one. Due to the sake brewing license, Okasumi-san is now limited to producing craft sake, not sake, but I really wanted to support his efforts to obtain a license and revitalize the industry.

This is a peach-colored nigori sake from Gobashi's seasonal "ride? It is made with red yeast and has a spring-like pink color. Because it is an active nigori, it must be opened and closed repeatedly or it will spill and lose half of its flavor. The separated nigori is stirred and turns pink. The taste is... Sweet and sour and shwashy, it is nothing short of delicious. It has a sake rating of -54, but it also has a high acidity level, so it is not too sweet. It can be enjoyed on its own or with vinegared foods. It is also good as a dessert sake.

Dawn of the Young: Day 2 A rainy, cold day. One of the drinks of the day, a Benten Musume from Ota Sake Brewery, Tottori Prefecture. Junmai light nigori, Sake degree +8, Alcohol 19-20%. One would expect the alcohol to be harsh and difficult to drink, but it is a refreshing drink with no hint of alcohol. We enjoyed the gorgeous taste of Aragori. The sake has a sake strength of +8, but it does not feel that harsh.

This sake is made by Kondo Sake Brewery in Gunma Prefecture. A female brewer worked on this sake together with the toji (master brewer). This year is their third season. I bought it on my way home from a visit to Marunuma Kogen ski resort in Gunma. The aroma is not that strong but slightly fruity, and the sweetness is medium. It can be used as a mid-meal drink. It also has the aroma of steamed rice. The aroma of steamed rice is also present, and it is well balanced. At 1,430 yen for a jungin unfiltered raw sake, it is a cosy sake.

It is a Junmai-shu of Shinmasa colors. It is a single heating process. The first sip...strong acidity. The aroma is mild, not very fruity. It has a strong umami, and is not the type that is refreshing like water. The impression is that the umami is firm and the sweetness is medium. It is good as a food sake. It was so delicious that when I noticed it, more than half of the bottle was already gone.

This sake is brewed in Takane-cho, Hokuto City, Yamanashi Prefecture. Every year, we used to go camping to the end of Nobeyama, passing right by... Representative brands are Take-no-i and Seikou This sake is made from "Hitogochi" grown at CRAZY FARM in Hokuto City. It is a slightly low-alcohol sake with an alcohol content of 14.5%. The taste is full of steamed rice aroma, but there is a melon aroma hidden right behind it. It is slightly sweet, but the acidity tightens the taste. The extremely thin ori and gaseous taste is reminiscent of the night sky of Hokuto City, which spreads countless times in the glass.

Kaze no Mori Akitsuho 70% polished It is a slightly low alcohol sake of 14 degrees Celsius. Opened the bottle when it was well chilled. It sizzled but not so much that the lid flew off. The first sip has a slightly subdued aroma and sweetness. A little dry? It was not what I expected, but as the temperature rose a little, the fruity aroma and sweetness blossomed. Chilli gas feeling. Hmmm, delicious 😋. Light and easy to drink, swishy... Swissy without a pinch... I found myself with about a cup left... Dangerous. 😵‍💫

Opening the bottle...it opened easily without spurting out. The first sip was from the supernatant. It has a great thickening sensation.     The acidity is strong and apple-like. After the second sip, well mixed with the muddiness... The acidity remains the same. Sweetness seems to have increased. There is quite a bit of sweetness, but it is capped off by the strong acidity. The stickiness of the sweetness increases and the acid aroma becomes tougher. But when you drink it, you don't feel it. Condensed flavor. If you don't like sweetness, this may not be for you. It is described as being like apple juice, and that may be true. It is my personal opinion that it is not suitable for drinking while eating. It is a drink to be enjoyed on its own with a few snacks. It is a sake for those who have different likes and dislikes. If you don't like sweet, thick, or strong acidity, it may not be for you.

This sake can only be purchased at the kiosk of the Toshimaya Sake Brewery. It is a Junmai Daiginjo with a gorgeous aroma and a slightly drier taste than the middle type. The taste is a bit drier than the middle type, more of a refreshing type. Personally, I prefer the green version of the umakuchi special junmai.

This is Tamagawa's super sweet sake. The color looks like aged sake. Although it is super sweet, it has three times the acidity of ordinary sake, so it is not too sweet and has a nice sharp taste. It has a complex flavor due to the use of the sake yeast and lactic acid-free yeast. It tastes like Shaoxing sake. But it tastes light. It is a strange sake that goes well with ice cream and salty dishes. Be careful not to pour too much on ice cream, as it will give off a bitter taste.

It is a special honjozo, unfiltered, raw sake, directly pumped. This was my 12th glass today and I drank it without carefully checking the specs. It has a ginjo-like mouthfeel that is hard to believe it is a honjozo. I was fooled in a good way. This is what it means to drink it as you feel it. It is delicious. It has a refreshing fruity aroma, and the sweetness was subdued.
