Urasato Another brand of Urasato Shuzo, which brews Kirizukuba. The rice, water, koji mold, and yeast are all produced in Ibaraki Prefecture. The yeast used is Ogawa yeast. The brewer's brewing philosophy is to master Ogawa yeast. The rice used is Gohyakumangoku. Aroma: Slight melon aroma.    The aroma is mild. There is no sense of gas. Taste: Slightly sweet.   Slightly sweet. No alcohol is felt.   Beautiful sake quality, no hookiness. A delicious sake that goes down smoothly. I drank it for the first time at the Wakate no Yoake no Dawn. At that time, it was junmai ginjo, but it was very refreshing and junmai is also delicious. I am now interested in one more brand.

Saga Sake. It is a highly-rated and highly-anticipated reborn brewery. I bought it because the liquor store said it was a one-of-a-kind flavor. The specs seem to be undisclosed, with no mention of yeast or rice polishing ratio. Alcohol is 15 degrees. Mix the corkage and open the bottle. The bottle opens with a "pop". It looks like champagne. The bubbles are strong and it is undergoing secondary fermentation in the bottle. The bubbles are like a soil. A flute glass goes well with it. The first sip is filled with a muscat-like fruitiness. The fruitiness reminds me of hopped bloc of rice and agave. The bitterness follows closely behind. Bitterness is a bit strong. I thought it would be sweet, but it is rather dry. The aroma is not too harsh, so it is easy to match with food. The bubbles also help it go down your throat, so you can easily drink it on its own. On a hot day, you might drink too much.

Gunma Prefecture's famous sake, Basho's Junmai Daiginjo Midori I have had various types of fire-brewed sake from the same brewery, Mizubasho and Tanigawadake, and I think that most of them are basically of the refreshing type. This one was different from the previous ones in that it was sweet and tasty. The aroma is much milder because it is fire-aged. It is better to drink it in a sake cup than in a wine glass. It has a beautiful sake quality and is well-balanced without any stickiness. It does not interfere with food, so it can be served with a wide range of dishes.

Fukui Prefecture's sake Bon ice-aged sake. The label says it is thick and dry. First sip after opening the bottle It has a mild but slightly melon-like aroma. It has a fruity aroma. Although it is a fire-brewed sake, it does not smell like sake, which is very promising. In the mouth, it is very clear and has no alcohol taste. And although it is labeled as dry, it does not feel dry. To be honest, I am not a fan of dry sake, but it is very easy to drink. There are no sticking points, and it goes down smoothly. It has a strong umami flavor and is a great sake that you can't stop drinking. It was a delicious sake that is refreshing and can be served with any food.

Miyagi Prefecture's Sake: Hitakami. If you're going to do it with fish, it's Hitakami. The rice used is Aizan...it has a gentle sweetness. Sake made with Hououmida wine yeast and second fermentation in the bottle. I thought it would be sweet, but it felt surprisingly dry. The sense of effervescence is also a little weak. The aroma is grape, pear, or perhaps apple? Maybe capsule type - fruity but not too strong. I brought it on vacation to drink with others, so it wasn't served in a proper drinking vessel (small plastic cup), so my impression of it was vague. Next time I would like to drink it with a proper sake cup of my choice.

Toshimaya Sake Brewery This sake is sold exclusively at the sake brewery's kiosk. It is a juicy, fruity, slightly dry sake. It is a modern type of sake in the same family as Yamori, but it is priced a little higher than Yamori, so it seems to have something special about it. There are three types in the lineup: special junmai, junmai ginjo, and junmai daiginjo. There are two types of sake: 4 gou and 300ml, which is a great option for those who want to try it out. The aroma is not too strong, so it is easy to match with food. Personally, I prefer the neon green color of the special junmai for its aroma, sweetness, and flavor.

The tour + tasting is 1,000 yen. ‼️ Sometimes they serve sake that has been entered in a sake competition or yamori (a sake that has been sold at a sake brewery). ⁉️ It's worth a visit.

Local Sake from Higashimurayama City, Tokyo This is a locally brewed Higashimurayama Honjozo Nama-Shu from the Toshimaya Sake Brewery, which also brews Kinshin and Yamori. It is a rare opportunity to drink this sake, but I won it in a 500-yen raffle at the brewery's direct sales office. To be honest, I am not a fan of Honjozo, but this Honjozo Shiboritate Unfiltered Nama-Genshu and this Nama-Shu are very easy to drink without the aroma of Honjozo, which I do not like. The aroma is mild and the taste is medium. It has a gentle sweetness. It has a clear, clean taste and can be easily matched with a variety of dishes. Tomorrow is the first Toshimaya festival in a long time. Can't go due to work, sorry, sad...

Igarashi Sake Brewery Storehouse Festival Next, free tasting of limited-edition sake from the brewery Specs not yet disclosed. It did not have much aroma, but it had a rich flavor and juicy mouthfeel. It was delicious. I liked it at first sip. From the price and taste, I would say it is a medium to slightly sweet Tokujun. I think it can be easily matched with a wide range of dishes. I immediately got in line to buy it, but it was very crowded and I had to wait for more than 30 minutes. Please increase the number of cash registers during events!

Today is the Igarashi Sake Brewery Festival. It is a great success. There is an unbroken line of people waiting for the piston buses. I went right after the festival started, but the buses were already full, We started with the tasting area at the entrance... Junmai Nama-no-Harazake, a limited edition of the brewery festival! It has a gorgeous aroma, a light taste, and a slight effervescence with acidity. It is light, so if you want to match it with food, I would say the first half of the bottle is the best.

Yamagata Prefecture Sugiyuu Warabioka Sake Brewery. This is a limited edition sake that is only distributed by a few stores in Japan. It was mentioned in some online article that it was made at the request of the owner of a pioneering local sake store. Is this the same store that sold this? The owner of the store was very much in favor of it. The rice used is Dewa Sanbana. Opening the bottle...well, it is as gorgeous as expected. It is in the middle of the gorgeous, sweet and umami type. The flavor is a bit rich and has a strong umami. It is more like a tokusyu jun with a lot of umami than a well-rounded jungin. Well, it is delicious either way. It can be enjoyed on its own, but if you want to pair it with food, what would you recommend...cold appetizers, cheese, sweet and sour simmered dishes, or vinegared dishes?

Top Rank of the Saku no Satoshi Series, Mie Prefecture Masanotomo Junmai Daiginjo Nakadori. It is a gorgeous and delicious sake as you can already imagine. This gorgeousness in a fire-aged sake.... I think it's amazing, and what can I say, it's delicious. It is a medium to slightly dry sake, but when drunk in a wine glass, it has a hint of sweetness. Also, because it is fire-aged, it is milder than the raw sake. It is an interesting sake, very floral but mild. It has a good balance.

This is an orikarami junmai sake from Eiko Fuji. Association No. 10 yeast, 65% polished rice, alcohol 16.9 Sake degree -7, Acidity 1.5 The specs suggest sweetness. Try drinking it... Not much of an aroma. Mild rice aroma. There is a chirpy, gassy feeling. The taste is more dry than medium, which is hard to believe for a sake level of -7. It is not so sweet as to make you wonder if it is really -7. No, there is a sweetness in the back of the bottle. It is strange. It has a nice sharpness that makes it suitable for a mid-meal drink. It has a little bit of alcohol, but you can also taste the umami.

This sake is made by Watanabe Sake Brewery, Tochigi Prefecture. Although not shown on the tag, this sake is unpasteurized, enclosed in a single bottle, and aged for one year in ice temperature. The production volume is small, and the sake is lot numbered. Two types of rice (Yamadanishiki and Aizan), three types of rice polishing ratios, and six types of yeast (1801, 1401, 601, Tochigi yeast, Hiroshima ginjo yeast, and M-310) are used. Is it mostly aromatic? The specs are ridiculously elaborate. I mean, I have never seen a sake like this. The sake level is -3, but it doesn't seem that sweet. The first sip in the glass tastes very refreshing and gorgeous. It goes on smoothly... The aroma is very gorgeous and clear even though it is fire-aged. It has a firm umami flavor. It's so good, I wonder why there is so little media exposure for such a delicious wine? The price of 2,200 yen for such specs and taste is too cosy. This brewery has won the first prize twice in the Nanbu Touji Competition. The brewery is not large, but the level is high. It is a hidden masterpiece of Tochigi sake.
