Following the Aizan posted last time, this is Kuroemon's Yamahai Tokubetsu Junmai, Akaban Omachi. It is a 19BY and was shipped in July last year. The aroma is mild because it is hi-ire, but the strong flavor and acidity of Yamahai Omachi is very good. It has a faint aroma of aged nuts. The taste is dry and more like a classic type. It may not be suitable for those who like modern types. I first drank it cold and then warmed it up, but I prefer it warmed up. Personally, I like it best lukewarm 🍶.

This is a 13° Aizan from the closest brewery to the stars in Japan, the Yukawa Sake Brewery in Nagano Prefecture's Kurouemon 16th Generation Kurouemon Namikoshi Junmai. This brewery is a talented brewery that most recently won first place in the Junmai Ginjo category at the IWC for its raw yeast Miyamanishiki. This sake is made from premium Aizan rice with junmai specifications (65% milling ratio) and sake brewed using the sake yeast, and is a low-alcohol sake with 13% alcohol. It is fire-aged. The aroma is mild, with a balance between the soft sweetness of Aizan and the acidity of the sake's yeast, and a rich umami flavor without any sharp edges. It is very easy to drink and delicious. The 13% alcohol content also makes it easy to drink and it goes down smoothly. I tried heating it up to lukewarm, but the soft sweetness was more pronounced.

Golden Wedding, Yamoru's Tokyo Toshimaya Sake Brewery This sake was brewed exclusively for the TOSHIMAYA FESTA, which resumed after the Corona. The sake rice seems to be a Toyama Prefecture variety called Oyamanishiki. Although the alcohol content is high at 18 degrees, it is not harsh on the palate and has a rich umami flavor. The aroma is not so much fruity as it is muscat or apple with a hint of malt. The balance between the medium sweetness and soft acidity is exquisite. The alcohol content is strong, so if you let the ease of drinking take care of you, drunkenness will hit you with a gusto later on.

Hozasu from the Land of Origin This sake is brewed with rice naturally cultivated from "Hozasu", a species native to Kumamoto during the Edo period. Last year, it was sold out the day after it went on sale, and this year we were able to take revenge. It has a slightly drier impression than regular Yamada-Nishiki. The aroma is mild. It is not so much fruity as umami. The sense of effervescence is as strong as ever. It does not interfere with food and is easy to match with anything, but from the fizzy feeling, I feel that it is suitable for toasts, appetizers, and sashimi.

This is Beetle, a summer sake from Sengoku, Tochigi Prefecture. It is often described as a lemon squash with adults. The aroma is mild. Not much sweetness. Maybe it is the acidity? It is 14 degrees, but there is not much alcohol and it goes on and on. It's not good. It seems to come later. It tastes light and is a very summery sake.

This is a summer sake from the Chiyomusubi Brewery in Tottori Prefecture. It is a light and refreshing summer sake. Low alcohol content of 12%. Lightly cloudy with a mild aroma and the remaining aroma of unrefined rice, The secondary fermentation in the bottle makes it shwashy. The taste is medium, and it is easy to match with food.

Hananoka Shuzo, Kumamoto Prefecture This is a wooden vat brewed from the popular Sanzo. The bottle is opened and popped with the pressure of bubbles as usual. Pour it into a glass and take a sip... The aroma is mild with a hint of white grapes. Slightly dry mouthfeel. The bubbles are well fizzed, and the acidity is tightening. If you don't ask, is it champagne? Ishikawa Prefecture Miso Sake Brewery Youho no You~Ho. It is an aged sake. The label on the back said it was aged for 4 years, but it was pressed in February 2018, so it is actually 5 years old. When stirred, a lump of lees drifts in the air. First at room temperature... It had a mild aroma and amber color, but the matured aroma was not strong, and the flavor was rich and umami. It is easy to drink at room temperature. Next, we tried heating it up. It's not the season to warm up sake while summer sake is on the market... I was going to warm it up, but it was over 60°C... yuck, yuck 💦. It calmed down a bit. It's very easy to drink, with a gentle sweetness followed by a sharp spiciness. Delicious 😋. I think it is easy to drink even for those who don't like matured sake. (This is my personal impression) It is good not with light snacks or sashimi, but with rich simmered dishes, fish marinated in miso, or tempura. It accepts and pours in dishes with strong flavors.

Tomiyama Prefecture Fumikiku Sake Brewery Haneya This is my first visit to Haneya. Although it is labeled as nigori (nigori sake), it is not that thickly nigori, but rather a bit muddy. I requested a sweet and sour, juicy and gassy sake at the liquor store, and this was recommended to me. The bottle was labeled "Be careful when opening ⚠️," but it had rested well, so I was able to open it without the lid flying off. First, the supernatant...fruity with a hint of sakekasu, moderate sweetness, and beautiful acidity. It is indeed juicy and gassy, suitable for summer, and you can gobble it up. However, even though it is suitable for summer, it is still a 15% sake, and there is a slight alcohol aroma at the end. It is not harsh, though. The flavor of the sake itself was not disturbed, but the umami was a bit enhanced. It was not a drastic change. It was a delicious sake that is good for a quiet and peaceful summer night 🤗.

It is read as zaruso hourai. It is a low-alcohol sake with 12% alcohol content. This sake has a soft apple aroma and is right in the middle of sweet, sour and juicy. It is sweet, but also has a strong acidity that keeps it tight. The low alcohol content makes it easy to drink. It has a subtle aroma of sakekasu (sake lees). It is fruity, but the aroma is not that strong. I wanted to try other Zanso Hourai. I am happy to find a brand I like. I think it goes well with sauteed meat with fruit-based sauces and vinegared seafood for cooking.

at Nihon Shu-tsubaki Extra Off-course a la carte Nanaken Hishika (secret flower) and oysters in oil Shichiken Hizuka is a collaboration with voice actor Souma Saito. The rice used is Yumesansui rice polished to 37%. The price is quite reasonable with a gift box and a special booklet. The theme is said to be sake to drink while reading. The taste is a clear, clean, well-balanced Junmai Daiginjo that does not interfere with a wide range of dishes. It is not as sweet as I expected, maybe a medium palate. The oyster oil marinade that it was paired with was a perfect complement to the oysters, supporting their delicious flavor. It is the type of wine that you can drink all the time.

at Nihon Shu-tsubaki Item 5: Ine Mankai Ancient Rice Sake and Sautéed Pork with Fig Sauce This sake is made from an ancient rice called purple-black rice and has a light-bodied red wine-like color. The taste is also wine-like? It is sweet and fruity with a strong acidity. The fig sauce in the dish also had acidity, and the sweet and sour of the sauce and the sweet and sour of the sake went very well together. It was the best pairing of the day. This was delicious!

at Nihon Shu-tsubaki Item 3: Shinomine Rokumaru and Toropan Sake brewed with Shinomine Rokumaru's Hachikan 35 It has a gorgeous aroma and is medium to slightly dry. Paired with an unusual dish of bread sauteed in olive oil with negitoro on top. This also wraps the raw tuna with the gorgeousness of the olive oil and sake. The slightly spicy flavor went well with the raw fish.

at Nihon Shu-tsubaki Daruma Masamune Aged Three Years and Half-boiled Egg in Oyster Sauce served as the second dish. Daruma Masamune is an aged sake with a slightly pale amber color. Aged sake is not for everyone. I think it is less peculiar than other aged sake. If you don't like Shaoxing wine, it may be difficult... Two kinds of sake, one at room temperature and the other heated. Both are as rich as the combination of chicken egg and fish roe, and the taste of the sake is as good as the combination of chicken egg and fish roe. The heated version has a sweeter, gentler flavor that I personally liked.

at Nihon Shu-tsubaki This is a hopped bloc of rice and agave served with the pairing of the first dish, a yellowtail nameko. I had this sake at Young Dawn a while ago and found it a bit of a shock. With nigori, the aroma is usually masked compared to just the supernatant, but this one had muscat? Hops? Sweet, delicious, and super fruity! Due to the sake brewing license, it contains some secondary ingredients and is a dobrok, so it is not sake by the standards, but it is so delicious that it doesn't matter. As for the pairing, the fish and sake were synergistically delicious, and the fishiness of the fish was wrapped up in the sake. Thank you for the delicious pairing 😋.
