However, the aftertaste is not as strong as the impact, and there is a slight sweet and sour aftertaste, but it finishes nicely. The sweetness of Urakasumi is surprisingly stronger than Urakasumi. I think I prefer Hakurakusei though. 4.25

(Right photo) Generally, this sake is like water, but with a mild sweetness and flavor. Rather than being a refreshing sake, as one might expect from Urakasumi, it is more of an assembly of flavors that can be enjoyed on its own. Sweet and delicious with a firm body on the back end. This sweet/tart taste is also common with Hakurakusei style. 4.00

Floral but mellow aroma with a strong umami. Sweet and delicious as is typical of Shinshu Kamerei, but with a rich Yamadanishiki-like flavor that is distinctly different from other sake rice from Nagano. It is expressed without sacrificing any of the Shinshu Kamerei character. How light the aftertaste is! We would love to have a bottle at our house next year! 4.75 But what a luxurious day!

The acidity that I have felt in Shinmasa so far is quite restrained, giving the impression of beautiful sweetness. + Too clean to be considered a locally brewed sake, too good to be enjoyed alone as a food sake. (No, it can't be called a locally brewed sake with a rice polishing ratio of 30%, can it? However, I never thought I would be able to drink Sato Ubei at a time like this! 4.75

(Right photo) The yoghurt-like acidity typical of mizu-hashiroshi precedes the taste, and it is not as floral as expected for Aizan. It has more umami than Shunyo, and the aftertaste is also more typical of sake, but it is still a bit lacking for Aizan. I guess Amefall is basically a refreshing fruity type of sake. 4.25

The mild sweetness that remains from start to finish enhances the lingering acidity that gradually disappears after the rather strong sourness at the entrance. A truly refreshing yet satisfying sake, good to drink during this hot season! Highly recommended! 4.75

(Right photo) Sweet and juicy, but with Omachi-like richness and bitterness. Therefore, the pineapple flavor is less pronounced than Yamadanishiki. I personally rate it lower than Yamadanishiki because I don't like the Omachi-like feeling, but it still has no heaviness at all! The aftertaste is wonderful, with the bitterness giving it a sharp edge. 4.50

This is the last glass of a bottle, and yet it is so fresh and crisp, with just the right amount of sweetness and umami, it is irresistible! A type of sake with a gentle acidity to tighten up the taste. It's also very cost-effective! I wonder if my senses are numb from the two beers I've had since Yamazan! Jackson's craft beer as a chaser...extravagant! 4.75
