The sweetness and umami come in and go out smoothly. The aroma is of muscat and melon. As the temperature rises, the bitterness becomes more pronounced. Ajinomatidaya ver has an alcohol content of 15 degrees, compared to 11.5 degrees for the regular product. It is not light nigori. I wonder what other differences there are... 4.0
