20~30% of the bottle erupted and disappeared.
It tastes like green apple, muscat, and other young green fruits, with dense sweetness, acidity, and umami.
The overly vigorous effervescence is also enjoyable and makes it even easier to drink.
The back palate has a refreshing lactic acidity that is typical of a sake brewed using the traditional sake yeast.
It is a classic though it seems modern enough... I want to drink both modern and retro!
It's as good as you'd expect from a modern sake.
