Happy New Year to everyone at Sake no Wa! We had a lot of Kamoshiki in the New Year. Now, I've got the new yuri-brewed sake. As soon as you put it in your mouth, the smoky, rich sweetness spreads. The heavy sweetness typical of Omachi is nicely combined with citrus acidity, and you can feel the flavor in the air that escapes from the nose. When the lees are involved, the acidity asserts itself from the beginning, increasing the sharpness and making it easy to drink. As the temperature rises, a slight lingering bitterness is added, and the cup continues to flow. This season's yuri-brewed sake is also undoubtedly delicious, and I think its character has been refined since last year. It is an unfiltered, unpasteurized sake with an Alc. of 18 degrees, so if you pace yourself wrongly, you will quickly go under.

It's from a sake brewery in the neighboring prefecture of Oita, also in Hita, but we don't see yuri-bukkomi in Fukuoka 😆 I wish it was available in Fukuoka too ⤴️. I always buy it at the Asahi Souzou Sake Shop in Hita Mameda Town 🎵I wonder if they still have new sake!

I decided to drink Kamonishiki this New Year's Eve! I went back to my parents' house, and I'm now propagating the greatness of Kamonishiki to my parents and brothers. I've heard from my brother how to buy it. I can feel a little alcohol, which is unusual for Kamonishiki, but the freshness, sweetness and juiciness are superb. When the temperature rises a little, you can feel a slight bitterness and the sweetness increases. It's really delicious. Next year, I hope to meet many good sake based on Kamonishiki. Today is the last day of work. This one as a reward to myself for a year of hard work! The fresh sourness and fruity sweetness spread out, and the bitterness tightens it up. I think I can feel the bitterness in Kankiku. It's very tasty in its current state, but I have a feeling it will become even better in a few days. When the temperature range rose a little, the thick flavor typical of Omachi came out! I paired it with the oil from the chicken wing dumplings, and the oil and acidity went well together!

Third in the Isego Honten Potpourri series! The first Akatake is a snow, origarami raw sake. Your postings gave me a strong image of sourness, and no, it's true that sourness is the main ingredient, but I'm surprised I've never had such genuine fruitiness in a sake with sourness! When a small amount of lees are involved, the acidity becomes more mellow. As was the case with Kouyigiku, these two bottles overturned the concept of acidity that I had previously thought I was uncomfortable with. The alcohol is easy to drink at 13 degrees, and the aftertaste is a momentary slight bitterness with a lingering umami! I am simply amazed at the expansion of flavors that I have never experienced before. I think I'll enjoy the changes as I drink it little by little, but it might not last a week like Snoclet...

Isego Honten Pottery Series Part 2 It is the first Tenbi. I'll have it while I'm opening the Kouyouganiku. The slight firing sensation on the tip of the tongue, the moderate sweetness, and the acidity that unites with it are wonderful! And above all, this silky texture on the tongue. The bullet arrived from Isego Honten. It was imported from Saga to Tokyo to Oita, but I really wanted to drink it, so I popped it. I opened the bottle with a good sound. The vessel is filled with carbonated bubbles. When I drank the top clear, the impactful acidity ran through me. The strength of the acidity made me feel uneasy for a moment, but when I added a bit of coarse lees, the balance was mysteriously achieved and it became easy to drink. It has a low alcohol content and a sharpness that I've never experienced before. This was my first Kouryugiku, and I'm so glad I bought it! As per your review, I'll let it sit for a bit before I drink it.

It's new sake from Kangiku! It's absolutely delicious already, so I took a bottle home with me. The price is a threatening cospa, 2530 yen for a bottle. From the gorgeous aroma, the sweetness spreads as you would expect, and the slight acidity tightens up the mouth nicely. It's a really clear sake, just like the concept, and you'll drink it up in no time.

Jyosu Mori has finally landed in Oita! When I went to pick up the doburoku before, there was a trial bottle in the store to see if they would stock it, and I took it to the cashier without knowing it. I didn't know that, so I took it to the cashier and said, "It's not for sale yet. I'm sorry." I was told by the proprietress, "I'm sorry, but it's not for sale yet," and I fervently begged her to stock it.  My wish was answered. I was able to bring it back this time😊. The aroma is sweet with a hint of lactic acidity. It looks like an origara-mi, or cloudy white. When you put it in your mouth, the sweetness is similar to the doburoku of that time, maybe because it was made in one step. There is almost no aftertaste, and it is not very alcoholic, so you can drink it like juice. It's delicious. I didn't know there was such a thing as sake. Next time, I'll buy a Junmai Ginjo and go home.

I could buy it in the country in Oita! Really happy😊. I really wanted to buy the unfiltered unpasteurized sake to compare, but it was limited to one bottle. Your review said pineapple, and I was skeptical because I've never felt pineapple in sake before, but I was right! As soon as I put it in my mouth, I could feel the sweet deliciousness and the sourness that united with it. The sense of unity of the flavors is too wonderful! At the same time, the aroma that escapes from the nose is also included, and it is a perfect expression of tropical pineapple. The aftertaste has a lingering umami taste and a slight bitterness. The taste is far beyond my imagination. The mouthfeel becomes smoother with the lees, and the presence of acidity increases slightly. I'm hoping to get both types in a bottle next year!

This is the first Midama I've had from Ryoseki Shuzo since Hanamura. It has a mild melon-like sweetness in the aroma. When you put it in your mouth... The sweetness with a strong impact spreads to the mouth like a flash. The sweetness soaks into the tongue and changes to bitterness and sourness, while a pleasant alcohol feeling leaves the nose. This is an impressive bottle with a good balance of sweetness, sourness and bitterness typical of Yamada Nishiki, and the impact of sweetness that is similar to Hana Yuu. The sweetness is cleaner than Hanamura and doesn't linger, so you won't get tired of drinking it. When the temperature rises a little, the sweetness settles down and the overall balance becomes even better. It's delicious!

It's been a long time since we've been to Banshu Ikken and Tamaruya Shouten. When I went there to see what had happened to the lineup after the Corona disaster, I was told that unfortunately it was the time of the changeover from autumn sake to new sake, so there was a shortage of products. I was told that a lot of stuff would be coming in the week after next. The young proprietor doesn't drink Hiyaoroshi very often, but he recommended this one to me, and I took him home. He said it was a little dry. When you open the bottle, there is hardly any aroma. When you put it in your mouth, it is indeed dry, but the round acidity spreads slowly and goes through the nose. In the aftertaste, there is a slight bitterness and an alcoholic feeling, and it goes away quickly. Recently, there have been a lot of sweet and sour sake, so this is the first time in a long time that I have had a sake like this. It looks like it won't be too tiring to drink, so we'll enjoy it slowly and carefully. If you let it mature further, you might be able to make your own Nonosan.

This doburoku is made to order. I pre-ordered it at the end of August through a guide from my favorite liquor store, and it has arrived. It's my first doburoku! The sweet and sour Awaraku in the photo expresses it all. It tastes like sweet sake with the texture of petite rice and the sizzling cider-like carbonation you feel when you crush it, making it a refreshing, mouth-watering drink. It's adjusted to 5% alc:5% and goes down swiftly. It's no longer a dessert!

This is a repeat of Jun Dai Omachi, Morishima. This time it is Junmai-shu made from Miyamanishiki. Polished rice 65%, alc 15%. It has a slight carbonation on the bowl, so we expect it to be sweet and sour like the Omachi. The aroma is modestly sweet. When you put it in your mouth, you will feel the slight carbonation, sweetness and acidity as expected. The sweetness is more moderate than Omachi, but the umami is also strong. There is also a bitter aftertaste. The balance of acidity, sweetness, umami, and bitterness is very good without anyone being too assertive. The sharpness is also good and the cup goes on. I think I'll bring home a dry sake next time.

This is the first bottle I've had since I learned about the Hiyaoroshi genre. It is a repeat because of the clear image of Saku (Omachi) that I drank before. The aroma is like a ripe melon. Last time, it had a clear flavor with a watery texture. This time, the umami and acidity rise slowly and softly above the bottom. Once it spreads, it cuts off again as if it were sinking quietly. There is a faint bitterness in the aftertaste. This combination of acidity and umami is the characteristic of Yamadanishiki. There was a time when I continued to drink Omachi, so I think I'll try Yamadanishiki next time.

Four posts in a row, and this is the real deal. I was looking at some websites of breweries of sake I want to drink, and I found on Morishima's website that there's a shop near me that carries it! It wasn't listed on the shop's blog, so I was afraid to call and ask about it, but they said they had Omachi, Hitachinishiki, Miyamanishiki, and Yamadanishiki! I hurried over to buy some, and found them all lined up in the fridge! I should have taken a picture. I should have taken a picture... I brought home an Omachi today. When I opened the bottle, it smelled sweet. When you pour it into a bowl, it seems to be slightly sparkling. When you put it in your mouth, the sweet and savory flavors spread out with a soft acidity, and the bitterness quickly clears up with a slight bitterness. The heaviness that is typical of Omachi is concentrated in the first half, and the second half ends nicely, making it easy to drink. I think this is very similar to Kamonishiki's Omachi nama-shu. Kamonishiki is a little less sweet and gorgeous. It is a definite repeat customer.

This is a memorandum. No detailed memory is left. My boss gave me a hometown tax return gift. By the way, I chose the products. I thought I had to try Noguchi Toji's sake at least once, but I finally met him. It was a shocking encounter. When I put it in my mouth, the aroma of wood spread. The first thing that surprised me was the aroma of wood! From there, the umami, sourness, and bitterness spread out, but each one floats around like a lump and disappears with a time difference. It's a very complex flavor, and it's a flavor I've never experienced before. It says that it needs to be refrigerated, but I felt the depth of nostalgia that it would show various expressions even in a different temperature range.

I'm late posting this, but I was drinking it at the same time as the Collage. The sweetness with acidity spreads slowly from the slight sparkling sensation typical of Kaze no Mori. The complexity of the low polish combined with the thick flavor of the Omachi gives it a wonderful fullness. At the end, a slight bitterness tightens the tongue, and the fruitiness and a slight alcohol feeling blow through the nose. Kaze no Mori is no disappointment.

This is my first Sharaku in a few years. It's been since I started getting into sake, so it's like I've gone back to the basics. The sourness spreads after a modest but banana-like sweetness, and it seems to soak into the tongue while leaving a bitter taste. I've had a lot of sweet ones lately, but Sharaku is still delicious!
