The first Akatake is a snow, origarami raw sake.
Your postings gave me a strong image of sourness, and no, it's true that sourness is the main ingredient, but I'm surprised I've never had such genuine fruitiness in a sake with sourness! When a small amount of lees are involved, the acidity becomes more mellow.
As was the case with Kouyigiku, these two bottles overturned the concept of acidity that I had previously thought I was uncomfortable with.
The alcohol is easy to drink at 13 degrees, and the aftertaste is a momentary slight bitterness with a lingering umami! I am simply amazed at the expansion of flavors that I have never experienced before.
I think I'll enjoy the changes as I drink it little by little, but it might not last a week like Snoclet...
