ののさんAfter regaining his composure, he opened the bottle. The lid blew off with a pop! When I poured it into the glass, there are bubbles on it. In the mouth, there is a gaseous sensation on the tongue with a slight acidity. It is quite dry with a clean aftertaste. At 13% alc, it tastes good and you will not get tired of drinking it. I paired it with Gouda cheese today 🧀.

ののさんThe bottle was opened at the 50th & 25th anniversary of my grandparents' death. They were all heavy drinkers and it was gone in no time, so my memory of the taste is a bit fuzzy. It has an old-fashioned alu-feeling in the mouth, and the sweetness from the sake's future spreads out, but it is sharp. The acidity is low. That is my impression. No repeat.

ののさんThe last time I had a bottle of Seikai, it was so good! This time Hoshikai is said to be one as a contrast. While Qinghai is impressive for its juicy acidity, this one is characterized by its gentle sweetness and deliciousness. The acidity is soft and reserved so as to give it a contour. Each taste is well balanced and seems to express the sense of relief and elation of standing on the beach at night. It's really amazing that the same brewery can make such differently characterized, each insanely delicious sake, all with the same summer ocean theme! The shock of encountering the blue sea is Aomi, and the one you want to drink forever and ever is Kukai. Both are the best of both worlds 😊.

ののさんThe usual, stable Kanjiku. And, surprisingly for the first time, Dewa Sanzan. The aroma was the same as usual, or a little sweeter. When you put it in your mouth, the acidity spreads instantly like a flash. The sweetness comes later. In the latter half, the sweetness gradually seeps into the palate, as is usual with Kangiku. There is almost no bitterness, and the aftertaste is long. The acidity is a bit like Kouei Chrysanthemum, and I like it.

ののさんThis bottle is only available at the Shinshu Kamerei brewery. I was lucky enough to get a special limited sale at sakenomy. If you can buy it for only 200 yen as an intermediary fee, it is conscientious. It has a sweet aroma like melon, and is soft and gentle like cotton. I have never had such a soft and smooth sake. Like the aroma, it has melon-like sweetness and cute acidity. The finish is gradually seeped with bitterness. In addition to the good balance typical of Shinshu Kamerei, you will be surprised by the first time experience of mouthfeel.

ののさんLots of sake luck lately, nice vault! First of all, we opened the bottle with Jikin. We were able to purchase it after winning a prize at a Twitter event held by Fukuhara Sake Brewery in Tokyo. It has a fruity aroma with a beautiful sweetness and moderate bitterness that spreads softly. This kind of bitterness tends to linger, but it's as sharp as you'd expect! A slight cemedine feel is likely to change over the next few days. As it approaches room temperature, the flavor expands and becomes more profound. The well-balanced flavor of this 16%, yet not tiring to drink, is one of the best!

ののさんA bottle brewed in the hope of overcoming corona. It is 29% polished rice and is very high cosmetics! As usual, the aroma is subdued, and the overwhelmingly clear sweetness spreads as soon as it hits the palate. The pure sweetness like cotton candy is outlined by slight bitterness and acidity. When compared to Kukai, the acidity is still moderate and the elegant sweetness stands out. My brother-in-law was delighted!

ののさんKangiku, stable and delicious. What is fire-roasting anymore! So fresh and juicy! It has a gassy and sour taste that enhances the sweetness, a sweet flavor typical of Kangiku, and a mellow aroma like that of grapefruit that escapes through the nose. It soaks into the tongue gradually and is tightened by the acidity. Good thing I got it in a bottle 😊.

ののさんPurchased at the usual Kotani liquor store. Slightly strong lactic acid aroma. In the mouth, contrary to the aroma, the acidity is moderate. The acidity is just enough to give a thin outline, and the sweetness is like ripe apples. The taste does not change much in the mouth, and it slowly and deliberately seeps into the tongue. It is a sake that seems to have subtracted acidity and a slight fizz from the trendy modern style. Oh, the acidity became a bit more assertive as the temperature rose. ののさんI was wondering if I should post this as it was given to me at a tasting, but as a record. Not knowing the date the bottle was opened, it is difficult to judge, but the characteristics are a texture that you can feel the core of the rice, dryness, and an acidity that is assertive throughout. It said it was mizu-hashiroshi brewed, but I wonder if this acidity is a feature. The best thing was that I met a sake with a strong impact and that the proprietress remembered my name ✌️.

ののさんAkabu Sake Mirai is highly acclaimed in many places. After a long wait, the bottle is finally opened. From the clear mouthfeel, the sweet flavor explodes with a slight acidity.... It is just like Kamo Nishiki Brilliance Yamada Nishiki! It's wonderful to see the similarity between the works of two leading young master brewers, isn't it? *This is my personal impression. If you think they are totally different, please let it pass. The difference between Yamada-Nishiki and Sake Mirai is the thickness of sweetness. The way the acidity wraps around it, the way the flavor expands, the aroma through the nose, it's all wonderful, delicious!

ののさんA smoothie-type craft beer made with Kangiku Red Diamond sake lees. It is different from sake, but please forgive us for posting. Today, my family and I are having a BBQ while enjoying the cherry blossoms in our yard. The fresh acidity also refreshes the oil from the meat. It tastes like fruity sour peach lactic acidic carbonated juice 😊. It's the kind that has no bitterness and even people who don't like beer can drink it for sure.

ののさんPurchased at Sake Sento Horiichi. Mr. Tottei said that Omachi is the most popular among the Ni-Utsuri and expresses the Ni-Utsuri style the best. They say it expresses two opposing tastes, and indeed, the taste is extremely difficult to describe! The sweetness gradually gives way to a predominance of acidity, and the tongue is stimulated. At the same time, the taste of Omachi swells, and the lingering bitterness is pleasant. The expression changes as the various tastes shift dazzlingly. This is a sake that seems to have all the charms of sake packed into one bottle. As it approaches room temperature, the alcohol smell disappears and the complex flavors coalesce to create a sense of unity. Delicious!

ののさんHIZIRIZM Based on the brewery's unique environment, this limited-quantity sake is primarily a "test brew" or "challenge sake". *Specific names are not indicated for sake.  From the Sei Shuzo website. Slightly gassy and fruity sweetness. The taste is clear with the delicacy typical of Yamadanishiki. The aroma through the nose is gorgeous and characteristic. Difficult to describe. It smells like lily of the valley. The lingering aftertaste leaves a thin bitter taste on the tongue, and the cup goes on drinking. Very tasty! I am looking forward to the changes tomorrow.

ののさんIt is brewed with Misato Nishiki and Yamada Nishiki and was released in a limited edition of 250 bottles at UTAGE at the end of last year. I had planned to drink it over the New Year, but since it is absolutely delicious, I really wanted to share its greatness with someone. While Yamada-Nishiki's brilliance was sweetness and transparency with full Yamada-Nishiki character, Misato Nishiki is characterized by a light mouthfeel followed by a spread of sweetness and deliciousness with complexity. The lack of alcohol is common to Kamo Nishiki, and is one of its quintessential qualities. As the temperature range rises, the fullness of the flavor and aroma increases, and a sense of gravity emerges. My boss couldn't help but say, "This is good! The wine was so good that it was a surprise to see the wine being sold at the restaurant.

ののさんThe nigori sake from Hirotogawa that I had previously drank was so delicious that I went to my usual Kotani Sake Shop to repeat the experience with a bottle of sake. I was thinking that Aizan from Kangiku was also really good, and then I found a new shipment of Daimine! This is my first Oumine. It smells sweet like a tropical fruit, something I have never smelled before in sake. When I put it in my mouth, it was very smooth. The aroma of the previous section is accompanied by a juicy acidity that enhances the sweetness typical of Aizan and passes through the nostrils. The lingering taste is slightly bitter and umami. I have never tasted a sake with such lingering umami. I was depressed because I couldn't buy Shinshu Kamerei Yamadanishiki and Jikin sparkling, but now I feel better.

ののさんIt's the Aizan from Kangiku that I couldn't buy last year! This year I got it in a bottle! It has a faint sweet aroma. The aroma is subtle and sweet, and it comes in like water, with a clear sweetness that is free of miscellaneous flavors like sanonto sugar. The sweetness soaks into the tongue slowly, and the acidity and bitterness tighten the taste at the end. The sweetness is delicate and clear, just like Aizan, and is a wonderful fusion of the two.

ののさんSince the end of last year, every time I saw it on the internet, it was highly rated. I had given up thinking that I missed the timing, but when I went to pick up the chrysanthemum, I found the last bottle! Let's start with the top clear. There was a slight smell of semedyne, with a slight sparkling sensation and sourness on the tip of the tongue. It has a modest sweetness and umami that soaks in with the acidity. This is the first time I've had Hirotogawa's raw sake, but I think it's quite different from the fire-hardened Junmaishu I've had before. The proprietress told me it was dry, but the flavor was strong and sweet-sour, making it easy to drink. The acidity recedes without leaving a lingering aftertaste, making me want to take another sip right away. When stirred, the lees become entangled, adding a lactic acid nuance and increasing the sweetness. It's a satisfyingly high rating! I'm sure I'll be repeating this again next year.

ののさんAt the Isego Honten online store, it's the real deal! I couldn't buy it because it was sold out so fast since November, so I seriously stared at my phone and got it! The aroma is subdued, and when you put it in your mouth, you can feel the tart acidity on the tip of your tongue, while the thick sweet flavor runs through your mouth with a thick and dense texture, and then it leaves your nose with a slight bitterness. It easily surpassed my expectations, which were quite high based on its previous reputation. What is this? It's so delicious! Before I knew it, they were sold out of Yamae Nishiki, but I'll get the next one with all my might again!

ののさんPurchased at Isego Honten online store. I'm not sure if this is a good idea or not. I'm sure you'll agree with me. I bought it right away because it sounded so good😊. It has a gorgeous aroma and a smooth mouthfeel. I'm not sure what to make of it, but I'm sure it'll be great. It's a great way to start the day. This one is also a sake where acidity plays a leading role. I've never had such a juicy acidity before, and it made me realize once again the depth of sake. I'm looking forward to seeing how the acidity changes tomorrow😊.
