This is a repeat of Jun Dai Omachi, Morishima.
This time it is Junmai-shu made from Miyamanishiki. Polished rice 65%, alc 15%.
It has a slight carbonation on the bowl, so we expect it to be sweet and sour like the Omachi.
The aroma is modestly sweet.
When you put it in your mouth, you will feel the slight carbonation, sweetness and acidity as expected.
The sweetness is more moderate than Omachi, but the umami is also strong. There is also a bitter aftertaste.
The balance of acidity, sweetness, umami, and bitterness is very good without anyone being too assertive. The sharpness is also good and the cup goes on.
I think I'll bring home a dry sake next time.
